Vegan Peanut Butter Cookie






     These are a wonderful little pick me up any time of day, and a real delight to my senses...especially those in my tummy.  Easy to whip together with fresh and minimal ingredients.  Each of the 26 are only 62 calories, 8.6g carbs, 1.3g fiber, 2.5g sugar alcohol, 4.8g net carbs, 4g protein and 4.4g fat.  These can even be considered a healthy breakfast food.  Cookies when the sun comes up is a great start to the day!  :)

Ingredients for 26 Cookies~

1/2 cup Oats, grind to powder in Magic Bullet

2oz chopped Fuji Apple, grind to Applesauce in Magic Bullet (sub with 1/4 cup Applesauce)

1 cup Peanut Butter, (I use chunky)

1/3 cup Lakanto Golden Monk Fruit~use code Paige20 at checkout for discount, plus extra to sprinkle on top of Cookies if desired~sub with a ripe Banana for a natural sweetener

1 teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

     Add all ingredients to bowl, stir til thoroughly combined, drop by level Tablespoon on silpat lined cookie sheet, using a small fork, press a criss cross lightly in the top of each cookie, sprinkle with a little extra Monk Fruit if desired.  Bake at 350 for 12 minutes.  Enjoy  :)
