Ingredients~
3 Coconut Cashew Quest Bars
1 5.3oz Dannon Vanilla Greek Light&Fit Yogurt
6 Tablespoons Lowfat Cottage Cheese
2 Tablespoons Coconut Flour
2/3 of a 4oz Dole Pineapple cup
Dash Cinnamon
Dash of Paiges Handcrafted Vanilla
2 Tablespoon unsweetened shredded coconut, for topping

6 Silicone cupcake liners
In Magic Bullet, blend yogurt, cottage cheese, flour, and pineapple ( minus 12 tidbits) until smooth and creamy. Set in frig to chill. Spray cupcake liners with Pam in a 6 muffin tin pan, set aside. One by one, microwave a cashew bar for 12 seconds, divide in half and form soft bar to inside of silicone liner til all 6 are complete, then bake at 350 for 5 minutes. When cooled, filled with filling ( about 2 Tablespoons per cupcake) and top with shredded coconut and 2 tidbits per cupcake. Enjoy!!! ;)
