Chocolate Chunk Banana Protein Bread
It pays to follow the Quest Nutrition Facebook page !!! Last week I was awarded their Recipe of the Week and this week I noticed the new Recipe of the Week was by Andrea's Protein Cakery! That's how I discovered Andrea and have been OBSESSED with her recipes all week. I simply can't try them out fast enough, and so far they all ROCK !!! This was no exception, as well as fun and easy to make !!! Next time you are hankering for some dessert bread thats good for you, give this a try! You will be delighted with the nutritional stats, for an 1/8 of the loaf, it is 122 calories, 9.75g carbs, and 15g protein. This is not your standard loaf of bread!!! ;)
Ingredients~
6 egg whites ( I used 1 cup plus 2 Tablespoons Egg Whites)
2 Tablespoons Chocolate Almond Milk ( 45 cal/cup)
1 cup Vanilla Protein Powder
2 Tablespoon unsweetened Cocoa Powder
Dash Cinnamon
Dash Vanilla
Dash Lite Salt
1/2 teaspoon Baking Powder
2 medium Bananas, mashed ( 236 g)
1 Quest Double Chocolate Chunk, diced into small pieces.
Mix first 8 ingredients, then fold in Bananas and Quest Bar pieces. If batter is too thick, you can add another 1-2 Tablespoons Almond Milk. Line a loaf pan with parchment paper or spray with Pam. Pour batter into pan and bake at 325 for 40-50 minutes,til toothpick comes out clean or til springs back when touched lightly. Remove and cool completely (brings out the flavors), then slice and enjoy !!! ;) Store in refrigerator or freezer.

I always have a minimum of 3 trays going, but I don't tend to do a shot a day. I add some to a smoothie, do a shot every other day, add some to a salad, etc. You can consume the second growth of your wheatgrass, but I have heard it is lacking in some nutrients, so I normally compost it after it is all cut.
