Cookie Dough Peanut Butter Cup Smores
I had a pretty sleepless night last night, dreaming of all the ways I could use Andrea's newly created Marshmallow Protein Fluff, ... and then she had the genius to broil it !!! I GASP !!! Can you say Campfire roasted Marshmallows !!!??? Check out proteincakery.com for all of her other great ideas with the "Fluff" or follow her on Facebook, Andrea's Protein Cakery!!! Each Smore only has 266.6 calories, 5.8g carbs, and 26g protein. I don't always get the thumbs up, but this recipe got the approval of my two harshest critics ... Hubby and Daughter!!! So now I know for sure that it's as good as I think !!! ;)
Ingredients~
1 Cookie Dough Quest Bar
2 Tablespoons Marshmallow Fluff~http://foodfitnessbypaige.blogspot.com/2014/07/protein-marshmallow-fluff.html ( make sure to use the Agar Powder for this recipe as it holds up better)
1 Tablespoon PB2
1/2 Tablespoon Almond Milk ( I use the 30 cal/cup Almond Milk)
4 small squares Lily's Dark Chocolate sweetened with Stevia
Cut Bar into two equal pieces, and set on Silpat and put in microwave for 12 seconds. Pat into two equal squares about the size of Graham Cracker square and bake at 350 for 4-5 minutes, remove,and top one side with Lily's chocolate pieces. Meanwhile turn oven to broil and lay 2 Tablespoons of Fluff on pam coated aluminum foil and shape into a large circle similar to Quest Bar squares in size, broil til desired level of brown/black depending on your youthful Marshmallow desires!!! Blend PB2 with Almond milk and spread on opposite Quest square, top with Marshmallow and stack the 2 sides into Smore. Enjoy ;)
