Spinach Artichoke Chicken






     For those of you in love with Spinach Artichoke Dip but dread those empty calories,  this is an answer to prayer~ "Spinach Artichoke Chicken"!!!  A low fat dish filled with healthy ingredients, using carrots for dipping!!!  Have your dip and eat it too!!!  Hello fun new dinner recipe that the whole family will love  ;)

Ingredients for 4-6 servings~
1 Roma Tomato, diced
1.5 pounds boneless skinless Chicken Tenders
Italian Dressing, enough to coat Tenders
1 Tablespoon Extra Virgin Olive Oil
Yellow Onion, diced
1 Tablespoon chopped jarred Garlic
Dash Cayenne Pepper
1 cup shredded Carrots
4 Stems torn Kale
2 cups Baby Spinach Leaves
4oz Fat Free Cream Cheese
6oz 0% Fage Greek Yogurt
Salt and Pepper, to taste
1 can Heart of Palm, diced
1 can Artichoke Hearts, diced
1/2 cup shredded Parmesan
1/2 cup shredded Mozzarella

     Dice Roma Tomato, drain on paper towel thru out day, set aside.  Add Chicken Tenders and Italian Dressing to zip lock bag and marinate thru out day, flipping over every few hours.  When ready for dinner, heat EVOO in skillet and add Onions, Garlic and Cayenne til golden brown. Add Chicken Tenders and cook thoroughly, break into bite size pieces with spatula. Add Carrots til crisp tender, then add torn Kale pieces and Baby Spinach Leaves til slightly wilted.  Season with Salt and Pepper to taste.  Stir in Cream Cheese, Yogurt, Heart of Palm, and Artichokes til blended.  Top with Parmesan, Mozzarella, and diced Tomato's.  Serve with Baby Carrots.  Enjoy  :)
