Special Dark Shamrock Brownies
In the spirit of all things green, my Special Dark Shamrock Brownies host a surprise ingredient (...in homage to the luck of the Irish). Each of these large decadent 9 servings are only 190 calories, 4g net carbs, 10g protein and 15g fat. Not sure how you celebrate St Pat's but I guarantee these will be on my party table...and then in my mouth! I'm one happy leprechaun. :)
Ingredients~
1 ripe medium Avocado (about 4.5 ounces of pulp)
2 Extra Large Eggs, room temperature
1/4 cup Butter, melted (sub with Coconut Oil)
1/2 cup Lakanto Monk Fruit~use code Paige20 at checkout for discount
1/2 cup Almond Flour
1/2 cup Cocoa (I use Hershey's Special Dark)
6 scoops Vital Proteins Collagen Peptides
1 teaspoon Baking Power
Dash Cinnamon
Dash Vanilla
Dash Salt
1/4 cup Lily's Stevia Sweetened Dark Chocolate Chips
Add to mixing bowl, except for Chips, blend with beaters til fully incorporated. Stir in 1/2 of chips and pour batter into parchment lined 8X8 or 9X9 pan, sprinkle with remaining Chips, bake at 350 for 30 minutes. Enjoy :)
