Keto Ganache Cheesecakes







     Who doesn't love a good Cheesecake...  To make things even better, how 'bout a quick version with maximum flavor!  These two mini Keto Ganache Cheesecakes are only 260 calories, 17g carbs, 2g carbs, 13.5g sugar alcohol, 1.5g net carbs, 10g protein and 22.3g fat.  So when you need it, and you need it fast, you might give this one a try!  ;)

Ingredients for two servings~
1/4 cup/2oz Cream Cheese, softened to room temperature
2 Extra Large Eggs
2 Tablespoons Sour Cream
2 Tablespoons Lakanto Monk Fruit~use code Paige20 for discount at checkout
Dash Cinnamon
Dash Vanilla

1 Tablespoon Heavy Whipping Cream
1 Tablespoon Lily's Stevia Sweetened Dark Chocolate Chips

Raspberries, for garnish if desired, not included in macros

     Mix first set of ingredients til smoothly blended, pour 1/2 cup batter into each of two cooking spray coated ramekins.  Microwave each individually for one minute at a time.  Remove and cool in fridge.  Meanwhile, add second set of ingredients to small bowl and microwave for 20 seconds, stir til smooth, add half to top of each Cheesecake.  Garnish with Raspberries if desired, chill til ready to eat.  Enjoy  :)
