Cream Cheese Mexican Soup
What this soup lacks in beauty, it makes up for in taste! Seriously one of the best I have EVER tasted...it could be the Cream Cheese...just sayin'. Each of the 18 cups are 321 calories, 12.4g carbs, 2.7g fiber, 9.7g net carbs, 23.4g protein and 20.2g fat. This one hits all the high notes, and perfect for a large gathering. This filled the largest soup pot I have and my family polished it off in one day, it's just that good! :)
Ingredients for 18 cups~
3 pounds 85% lean ground Beef
1 small Onion, diced
1 Tablespoon chopped Garlic
Dash Cayenne Pepper
4 teaspoons Chicken Bouillon
2 blocks 8oz Cream Cheese
2 cans Rotel (I use Mild)
16oz jar Pace Salsa ( I use Mild)
16oz Water (use Salsa jar to measure)
2 15oz cans drained Beans (I used a triple mix can)

Diced Avocado
Shredded Cheese
Bell Pepper
Sour Cream
Pepper
Green Onion
Cilantro
Cook Beef, Onion, Garlic and Cayenne in LARGE stock pot, to safely hold 18 cups of Soup. Drain grease and stir in Bouillon til fully incorporated, then stir in Cream Cheese til well blended, lastly add the remaining set of first ingredients, heat thru and serve. Top with desired garnishments, not included in macros. Enjoy :)
