Shrimp and Scallop Mango Avocado Ceviche

     Lovin' our new Whole Foods in Wichita!!!  3 days in and I'm needin a Ceviche fix, and they have all the fixin's necessary !!!  Lucky me ;)

4 Limes
1 Lemon
1 Orange
1/2 pound fresh Cod, diced into 1/2 inch cubes
1/4 pound fresh Shrimp, diced into 1/2 inch pieces
1/4 pound Scallops, diced into 1/2 inch pieces
Mango, diced
Avocado, diced
Purple Onion, finely diced
Jalapeno, seeded and finely diced
Red Bell Pepper, diced
Yellow Bell Pepper, diced
Cilantro leaves
Lite Salt to taste

     Squeeze Lime, Lemon and Orange into glass bowl, about 3/4 cup worth.  Dice Cod, Shrimp and Scallop and place in juice, cover with lid and rest in fridge for fish to "cook" in the citrus acid for 45 min to an hour or til fish becomes opaque.  Meanwhile, chop the rest of the ingredients and sprinkle with salt.  Drain juice off the fish and add cooked fish to mixture when ready and stir thoroughly.  I served with homemade Tortilla chips with low carb tortilla's.
