Hot Fudge Granola Chocolate Sundae






     You know that mood when all you want is ice cream for dinner and nothing else will compensate...I know you do, don't act like you don't...  Anyhoo, such was the case when I created my Hot Fudge Granola Chocolate Sundae.  It was the perfect meal and I was completely satisfied, all guilt free.  For 384 calories, 25.7g carbs and 29.5g protein you can take a walk on the wild side, all the while remaining completely free from harm.  Feel like a kid again and have a Sundae Monday thru Saturday!  ;)

Ingredients for one Sundae~
2 Tablespoons Betterbody Foods Chocolate Peanut Butter Powder
1 Tablespoon Quest Chocolate Milkshake Protein Powder
1 teaspoon Cocoa
2 Tablespoons 25 calorie/cup Cashew Milk
1/2 cup Chocolate Halo Top Creamery Ice Cream
1 Tablespoon reduced fat shredded Coconut
1 Chocolate Chip Pumpkin Granola Square (see recipe below)

     Mix and stir the first 4 ingredients til smooth.  Pour over Ice Cream, sprinkle with Coconut and crumble Granola Square on top.  Enjoy  ;)


Ingredients for 24 Squares~
1 cup (about 35) Dates, pitted
1/2 cup Cashews
1 cup Pumpkin Seeds
1 cup Almonds

1 cup Lily's Stevia Sweetened Dark Chocolate Chips
1/2 cup Sunflower Seeds
1/2 cup Pumpkin Seeds
1 teaspoon Cinnamon
1 teaspoon Salt

1/2 cup Cashew Butter
2 Tablespoons Coconut Oil

     Grind all ingredients in first section in food processor to rice like consistency, stir in all ingredients in second section and add to large bowl.  Meanwhile, melt Cashew Butter and Coconut Oil and stir til smooth and pour over nut mixture, mixing thoroughly.  Add to Parchment Paper lined 9X13 dish, pat down firmly and bake at 350 for 18-20 minutes or til golden brown.  Remove, cool and chill.  When ready cut into 24 equal squares and wrap each individual square in saran wrap and store in fridge.  Eat alone or crumble on your favorite food (I loved it with Fage Greek Yogurt).  Enjoy  :)
