Shrimp Edamame Freekeh
If you love Shrimp and you love protein, you will LOVE Shrimp Edamame Freekeh!!! You heard me right, Freekeh ... google it! Freekeh is one of the best grains out there, a roasted green wheat with loads of fiber and protein compared to other grains. I don't eat a lot of grain, I feel like a little dab will do ya! So, check this recipe out and see how just a smidgen of grain adds a nice feel, texture and flavor to an already amazing dish! For a 1/6 of this recipe, a hearty serving is only 380 calories, 17g net carbs and FOURTY SIX grams protein... yes, that spells 46! So, what are you having for dinner tonight!?
Ingredients for 6 hearty servings~
1/2 cup Freekeh
1 1/4 cup Water
1 teaspoons Chicken Base
1 Tablespoon EVOO
1 chopped Yellow Onion
1 Tablespoon chopped jarred Garlic
Dash Cayenne
1 Red Bell Pepper, finely sliced
2/3 cup Corn
20oz cooked Edamame
2 pounds raw shelled Shrimp
Bring Water and Chicken Base to boil, add Freekeh, stir to combine, add lid, reduce heat and simmer for 25 minutes. Meanwhile, add EVOO to skillet and heat, while adding Onions, Garlic and Cayenne til golden brown, may take 30 minutes. Add sliced Bell Peppers til crisp tender, then add Corn, Edamame and raw Shrimp til pink, stir in cooked Freekeh. Divide into 6 hearty portions and Enjoy :)
