Basil Chicken

     When your momma shares some of her fresh backyard Basil Leaf bounty, there are no options other than to create a fabulous dish as an offering in return!  Bringing all these warm weather flavors together in one hearty dish will allow wonderful memories of seasons past to come to mind with each and every bite.  The health benefits "ain't so bad neither", each of the 6 servings are only 250 calories, 24g net carbs and 22g protein.  Take advantage of these exceptional leafy herbs and create your own masterpiece or give mine a whirl!  :)

Ingredients for 6 servings~
1/2 cup Black Rice, cooked according to directions
1 pound grilled Chicken Breasts, thinly sliced
1 Tablespoon Nutiva Red Palm Oil
1 yellow Onion, diced
1 Tablespoon chopped Garlic
Dash Cayenne
8oz sliced Mushrooms
1 Orange Bell Pepper, sliced
15oz drained Garbanzo Beans
Dash Italian Seasoning
Fresh Basil Leaves, sliced into thin slivers
12oz Cherry Tomatoes

     Cook Black Rice and Grilled Chicken according to directions.  Meanwhile, heat Red Palm Oil in skillet with Onions, Garlic and Cayenne til golden brown.  Add mushrooms til cooked thru, then sliced Bell Peppers til crisp tender.  Stir in Garbanzo Beans, Italian Seasoning, and half the sliced Basil leaves til heated thru.  Add cooked rice to serving bowl, pushing it to the perimeter, add vegetable mixture in the middle, top with sliced Grilled Chicken, and remainder of Basil Leaves, and garnish with Cherry Tomatoes.  Enjoy  :)
