Blueberry Lemon Muffins







     People usually shy away from muffins because they are loaded with hidden calories...which is exactly why I make my own!  You will not believe when I tell you that each of these 6 Blueberry Lemon Muffins are only 80 calories, 3.5g net carbs and 6.6g protein and stuffed with fiber filling awesomeness...(yes, that's a word...cause I "says" it is).  To make things more impressive, I just love combining the flavors of Lemon and fresh Blueberries.  I have found these to work great for breakfast or to grab as an afternoon pick me up, try them for yourself and see what time of day they suit you best.  Adding to the fun, I was able to experience Nutiva's new Buttery Coconut Oil and that puts these right over the "Muffin Top"!  :)

Ingredients for 6 large Muffins~
1 medium Lemon
1 Tablespoon Nutiva Buttery Coconut Oil
1 jumbo Egg
1 scoop Quest Salted Caramel Protein Powder
1/2 cup 30 cal/cup Blue Diamond Almond Breeze
1/4 cup Nutiva Coconut Flour
1/2 cup Swerve Granular Erythritol
1 teaspoon Neilsen Massey Lemon Extract
1/2 cup fresh Blueberries

     Cut off the ends of the Lemon, slice thinly and remove any seeds, add to food processor and grind to mush consistency, stir in rest of ingredients except Blueberries.  After well blended, stir in Blueberries, reserving a few to garnish on top after filling in tin.  Fill 6 Silpat lined cupcake tins equally and bake at 350 for 25-30 minutes, or til tops begin to crown.  Enjoy  :)
