Barbecue Chicken Pizza







 We all remember our "Firsts" in life, ... especially when it comes to FOOD! I remember my First Banana Nutella Crepe in Paris, my First Chocolate in Belgium, my First Fish N Chips in London, my First Peking Duck in Hong Kong, my First Philly Cheese Steak at Pats and Genos in Philadelphia,  my First Pepper Nut in Denmark, my First Gelato in Rome, my First Roasted Pig in Hawaii, my First Homemade Applesauce in Switzerland, my First Mexican Vanilla from Mexico, my First Beignet at Café Du Monde in the French Quarter, my First PoBoy in Alabama,  my First Parmesan in Parma Italy, ... AND my First Bar-B-Que Chicken Pizza at Wolfgang Pucks at the MGM in Vegas!  I was BLOWN away by the flavors, and it has been a favorite of mine ever since!  So in my quest for health, I needed to make a few modifications ... starting with the crust!  Yes yes yes, I used a Cauliflower crust on this baby, and it works perfectly with the other elements, ...not to mention, Gluten Free!!!  You might as well start your own list, and why not start here since a  1/6 of the pie is only 281 calories, 11g net carbs and 28g protein.  Enjoy  ;)



Ingredients for the Cauliflower Crust:
1 pound/4 cups bag 365 Everyday Value Cauliflower Crumbles in Produce Section (sub with frozen crumbles)
1 cup shredded 365 Everyday Value shredded Pizza Cheese (sub with your favorite cheese)
4 large Eggs
Salt to taste
Pepper to taste
Garlic Powder to taste
Italian Seasoning to taste

     Mix all together and form into crust on Silpat lined cookie sheet, bake at 450 for 15-20 minutes.  


Ingredients for Topping:
1 pound Chicken Breast, diced
1/4 cup Barbecue Sauce
1 cup freshly diced Pineapple from Produce Department, if possible
1/2 cup shredded Cheese
1/2 sliced Red Bell Pepper
1/2 sliced Green Bell Pepper
1 slice Purple Onion
Cilantro for garnish
Light Salt to Taste

     Toss diced Chicken with 2 Tablespoons Barbecue Sauce and cook thru in skillet or Air Fryer, spread on Pizza Crust, top with Pineapple, Cheese, Bell Pepper, Onion and drizzle with remaining Barbecue Sauce.  Bake at 450 for 10 minutes, remove and garnish with Cilantro and Salt as needed.  Cut into 6 pieces and serve.  Enjoy  :)  #sponsored
