Breakfast Muffins








     Are you wanting to make breakfast for someone special?  Are you wanting to do it with ease?  Are you wanting to make it look like you went to a lot of trouble?  You have questions and I have answers.  These could not be simpler or more tasty.  And, as an added bonus the macros are out standing.  Each of the 6 are only 110 calories, .6 carbs, .4g fiber, .2g net carbs, 9g protein and 7.3g fat.  When you need nourishing pronto, might I suggest you give these a try!?  ;)

Ingredients for 6 servings~
1 cup torn Baby Spinach Leaves
2oz canned sliced Mushrooms
1 mini sweet Bell Pepper, diced
5 Extra Large Eggs, well beaten
Salt to taste
Pepper to taste
1oz/1/4 cup shredded Cheese (I used Cheddar)
3 slices Bacon, cooked and crumbled

     Use 6 silicone muffin liners to fill a muffin tin.  Line each muffin tin equally with Spinach, Mushrooms and Peppers.  Pour beaten Eggs equally in each of the tins, and season as desired.  Bake at 350 for 20-22 minutes, or until set.  Remove, sprinkle equally with Cheese and Bacon.  Enjoy  :)
