Peanut Butter Cup Pancakes







     Is it breakfast, is it a snack, is it a dessert!?  Yes, yes and always.  My Peanut Butter Cup Pancakes were created because Lily's just came out with fab Peanut Butter Cups... which we all appreciate.  So my mind has been full of creativity as of late.  This stack of 3 will cost you 375 calories, 38g carbs, 9.5g fiber, 18.5g sugar alcohol, 10g net carbs, 24g protein and 23g fat.  The perfect way to start (or end) your day!

Ingredients for one serving~
1/4 cup Cottage Cheese
1 Tablespoon ground Flax
1 Extra Large Egg
2 Tablespoons Almond Flour
2 Tablespoons Peanut Butter Powder
1 Tablespoon Lakanto Monk  Fruit~use code Paige20 at checkout for discount
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla

1 Lily's Peanut Butter Cup, finely diced
1 Tablespoon Lakanto Maple Syrup~use code Paige20 at checkout for discount

     Mix first set of ingredients til well blended, drop by 1/4 cup batter on hot cooking sprayed skillet, flip when ready and cook the other side, repeat with remaining batter.  Stack and sprinkle with Peanut Butter Cup crumbs, drizzle with Syrup.  Enjoy  :)
