Twice Baked Keto Zucchini






     Twice Baked Keto Zucchini, my heart beats for you...and beats and beats and beats some more!!!  Each piece is only 144 calories, 2.5g carbs, .7g fiber, 1.8g net carbs, 5.3g protein and 12.2g fat.  These literally melt in your mouth, and are the perfect side dish on (or off) a keto lifestyle.  Try these TODAY!!!  :)

Ingredients for four servings~
1 medium Zucchini, cut in half and cut lengthwise
1 Tablespoon Olive Oil
1 extra thick slice Bacon,diced ( I get mine from the Butcher)
1/4 cup diced Onion
1 teaspoon chopped Garlic
Dash Salt
Dash Pepper
Dash Cayenne
1oz grated Cheddar Cheese
1oz/2 Tablespoons Cream Cheese
2 Tablespoons Sour Cream
Diced Green Onion, for garnish as desired

     Cut Zucchini in half and then cut each half lengthwise, scrape out pulp (set aside), make sure to leave a thick lining.  Rub with Olive Oil, season with Salt, Pepper and Garlic Powder, bake in parchment lined baking dish at 375 for 30 minutes.  Meanwhile, add diced Bacon, Onion and Garlic to skillet and begin to brown, season as desired.  When half way cooked, add pulp to skillet and mash with fork and cook til softened and Bacon and Onion are golden brown, set a few pieces of Bacon aside.  Stir in Cheddar, Cream Cheese and Sour Cream til well incorporated and melted.  Remove Zucchini from oven, fill equally with mixture, garnish with extra Bacon Bits and Green Onion.  Enjoy  :)
