Peanut Butter Protein Fudge







     This recipe puts the fun and yum in healthy living!  Easy to mix together, and fabulous macros...not to mention perfect for dessert or breakfast.  Each of these 6 servings are only 225 calories, 16.3g carbs, 1g fiber, 11g sugar alcohol, 4.3g net carbs, 22.5g protein and 13.2g fat.  The biggest question is, do I start or end my day with these treats...or both!?  :)

Ingredients for 6 servings~

1/4 cup Coconut Oil

3/4 cup 30 cal/cup Almond Milk

1/4 cup Lakanto Monk Fruit~use code Paige20 at checkout for discount

4 scoops Quest Peanut Butter Powder

3/4 cup Lakanto Peanut Butter Powder~use code Paige20 at checkout for discount

Dash Cinnamon

Dash Vanilla

2 Tablespoons/52 Lily's Stevia Sweetened White Chocolate Chips

     Add Coconut Oil and Almond Milk to microwave safe bowl, heat for 30 seconds, stir til Oil is melted and fully incorporated, repeat if necessary.  Stir in remaining ingredients MINUS 26 of the Chips, pat into parchment lined Pam coated loaf pam, and top with remaining chips.  Refrigerate for 2 hours, remove from pan, cut into 6 equal pieces, slightly separate from one another and let chill for another 2 hours so Fudge pieces can dry and set up around the edges.  Enjoy  :)
