Ingredients for 9 Brownies~
1 small (approximately 4oz) trimmed Zucchini
2 Tablespoons Butter, room temperature
1/3 cup Lakanto Golden Monk Fruit~use code Paige20 at checkout for discoun
1 small (approximately 3.5oz) peeled ripe Avocado
2 Extra Large Eggs
1/2 cup Almond Flour
1/4 cup plus 2 Tablespoons Cocoa Powder
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla
1 Tablespoon/26 Lily's Stevia Sweetened White Chocolate Chips
1 Tablespoon/26 Lily's Stevia Sweetened Salted Caramel Chocolate Chips
Trim both ends of Zucchini, grate into dish towel using small grater, squeeze excess moisture and let rest in dish towel, set aside. Add Butter and Monk Fruit to bowl, whip til well incorporated, beat in Avocado and Zucchini, then blend in Eggs. Continue with Almond Flour, Cocoa Powder, Baking Powder, Cinnamon and Vanilla, pour into parchment lined 8X8 and bake at 350 for 25 minutes, top with Chocolate Chips. Enjoy :)
