Almond Shortbread Cookies

     If you love Almond you will love these Shortbread Cookies!  They are the perfect size for a guilt free treat at 44 calories, 1g net carb, and 2.3g protein.  So easy to whip together, and store nicely in the fridge to enjoy all week long.  The batch makes 20, so you will have plenty to share if you are in the giving mood! ... otherwise hide them in the vegetable crisper where no one ever looks!  :/

Ingredients for 20 cookies~
1/4 cup Vanilla Cupcake Sweet Spreads, melted
1 scoop Quest Vanilla Milkshake Protein Powder
1 Jumbo Egg
1/4 cup Nutiva Coconut Flour
1/4 cup 25 cal/cup Silk Cashew Milk
1/4 cup Swerve Granular Erythritol
1 teaspoon Baking Powder
1/2 teaspoon Salt or Lite Salt
Dash Cinnamon
Dash Almond

     Stir all together til well blended and drop by Tablespoons onto Silpat lined cookie sheet.  This should yield 20 Tablespoons of batter, and thus 20 cookies.  Bake at 350 for 10 minutes, remove and cool.  Enjoy  :)
