Shamrock Pizza







     When an Italian and an Irish Leprechaun go out to dinner what do they order!?  Shamrock Pizza of course, duh!  The only thing I don't know is who picks up the bill...actually that's a lie, obviously it's the Italian because the Irish are lucky in that way, and every other way.  Now that we have that settled....  Truthfully,  I really don't care about any of that, I just want everyone to try my fun holiday idea this St Patrick's Day...!  Add to the celebration and get creative in the kitchen this year!  Even better news, a 1/6 of the crust is only 125 calories, 1.4g net carbs and 12g protein (add macros for toppings).

Ingredients for crust~
2 medium zucchini (about 12-16oz)
Dash Lite Salt
1 jumbo Egg
1 1/2 cup shredded Parmesan
Dash Pepper
Dash Garlic Powder
Pizza toppings, as desired

     Grate Zucchini into bowl, add dash of Salt, let sit for 5 minute, drain off liquid and pour zucchini into light dish cloth and SQUEEZE out excess liquid.  Return to bowl and mix with Egg, Cheese, Pepper, and Garlic.  Pat into Shamrock shape on pizza stone or silpat lined cookie sheet, making sure all crust is same consistency in depth.  Bake at 450 for 13 or until lightly golden brown. Remove from oven and add toppings of choice, return to oven til cheese melts or veggies are crisp tender.  Enjoy  :)
