Blueberry Banana Cheesecake









          I will never give up putting the fun in my health filled food.  My philosophy is that you can have it all without suffering.  And I intend to prove it, my Blueberry Banana Cheesecake is part of that data.  Each of the 6 sugar free pieces are only 217 calories, 24g carbs, 3g fiber, 21g net carbs, 16.5g protein and 7g fat.  You might think this is dessert, but I think it could easily be a breakfast.  Up to you to decide how many slices make a serving.  Feel free to garnish it as desired, I found Strawberries to be a nice topper, but any fruit or nut would do!  Isn't it wonderful to enjoy deliciousness guilt free!?  ;)

Ingredients for 6 slices~
1 container 16oz Cottage Cheese
4 Extra Large Eggs
2 medium ripe Bananas
5.3oz container Greek Plain Yogurt
Dash Lemon Juice
16oz pint of fresh Blueberries

     Add all ingredients to heavy duty blender, reserve a few Berries to sprinkle on top.  Blend til batter is smooth, pour into a parchment lined 9'' Springform pan that has been sprayed with cooking spray.  Garnish the top with reserved Berries, bake at 350 for one hour, add an additional 5-10 minutes if top still wiggles.  Remove and cool, rest in fridge for an hour at least or overnight to set.  Serve with additional garnish if desired.  Enjoy  :)
