St. Patrick's Day

https://foodfitnessbypaige.blogspot.com/2021/02/lucky-brownies.html

You can only participate in St. Patrick's Day if you are Irish...said no one EVER!  But, you do have to wear green or you may get a pinch!  Every March 17th, St Patrick, one of Ireland's patron saints, who ministered Christianity in Ireland during the fifth century, is celebrated with abandon.  It's always fun to take part in the festivities, and I have come up with a few healthy (and one not so healthy) recipes to enjoy.  Maybe one little lucky leprechaun will find you charming, and point you to a pot of gold at the end of a rainbow...or the nearest ATM.

Special Dark Shamrock Brownies

In the spirit of all things green, my Special Dark Shamrock Brownies host a surprise ingredient (...in homage to the luck of the Irish).  Each of these large decadent 9 servings are only 190 calories, 4g net carbs, 10g protein and 15g fat.  Not sure how you celebrate St Pat's but I guarantee these will be on my party table...and then in my mouth!  I'm one happy leprechaun.  :)

Ingredients~
1 ripe medium Avocado (about 4.5 ounces of pulp)
2  Extra Large Eggs, room temperature
1/4 cup Butter, melted (sub with Coconut Oil)
1/2 cup Lakanto Monk Fruit~use code Paige20 at checkout for discount
1/2 cup Almond Flour
1/2 cup Cocoa (I use Hershey's Special Dark)
6 scoops Vital Proteins Collagen Peptides
1 teaspoon Baking Power
Dash Cinnamon
Dash Vanilla
Dash Salt
1/4 cup Lily's Stevia Sweetened Dark Chocolate Chips

Add to mixing bowl, except for Chips, blend with beaters til fully incorporated.  Stir in 1/2 of chips and pour batter into parchment lined 8X8 or 9X9 pan, sprinkle with remaining Chips, bake at 350 for 30 minutes.  Enjoy  :)

Shamrock Lucky Charms

Although Lucky Charms are not my standard fare, they are magically delicious...and I do believe in celebrating (with in reason) during a Holiday.  For 12 small squares, they are each 128 calories, 24g net carbs, and 1.6g protein...knock yourself out and have two!  So enjoy St Patrick's Day,  and even if you don't find that pot of gold at the end of the rainbow, you can always enjoy your Shamrock Lucky Charms... while visions of Leprechauns dance in your head.  :)

Ingredients for 12 servings~
2 Tablespoons Butter
8oz Marshmallows
Green Food Coloring
4 cups Lucky Charms

Add Butter and Marshmalllows to large mixing bowl, microwave for 30 seconds, stir and repeat if necessary til melted.  Stir to fully combine, incorporating Food Coloring to desired level of Green.  Pick out Green Four Leaf Clover Marshmallows, set aside, and stir in remaining Lucky Charms and add to greased 9X13.  Spray your hands with cooking spray and use your hands to gently pat down in pan, sprinkle with reserved Four Leaf Clover Marshmallows.  Let set for 2 hours.  Cut into 12 servings.  Enjoy  :)

Clover Cookies

Wanna get lucky!?  These Clover Cookies will have your dice landing on "snake eyes" with every roll at the end of the rainbow!  Not only are they cute, but the entire batch of Shamrocks are a charming 666 calories, 22g net carbs, 48g protein and 38g fat.  Don't be green with envy, kick up your crafty heels, get your green on and think about who you want to share your pot of gold, err...cluster of clover with.  Then put on your famous Leprechaun smile and let that special person know that "I am luckier for me knowing you"... ;)

Ingredients for 4 Shamrocks~
2oz baked, cooled, peeled Sweet Potato, mashed
1 Tablespoon melted Coconut Oil
 1/4 cup Coconut Flour
1 scoop Quest Vanilla Milkshake Protein Powder
1 Extra Large Egg, room temperature
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla

1 Tablespoon Butter, room temperature
1/2 scoop Quest Vanilla Milkshake Protein Powder
2 Tablespoons 30 cal/cup Almond Milk
Green Food Coloring
Green Sugar Sprinkles, if desired for garnish (not included in macros)

Mix all dough ingredients in first section together and pat out on Silpat (or use a Pam sprayed sheet of wax or parchment paper) into a 1/4 thick inch rectangle.  Once flattened, use 2 inch heart shape cookie cutter and cut out 16 hearts, reserve the scraps (or use Shamrock Cookie Cutter).  Pick up Silpat and peel off hearts and arrange on another Silpat lined cookie sheet in the shape of four leaf clover, there may be space in the middle, if so, use scraps to fill in center as well as shape a stem for clover, repeat 3 more times.  Bake at 350 for 8-10 minutes, remove and cool.  Meanwhile, stir together Butter, Protein Powder, and Milk til smooth, add enough Food Coloring to desired shade of Green, and stir to incorporate.  Frost cooled Shamrocks, and add Sprinkles if desired.  Find your special good luck charm and eat them together while searching for your pot of gold at the end of the rainbow!  Happy St Patrick's Day, Enjoy  ;)

Shamrock Pizza

When an Italian and an Irish Leprechaun go out to dinner what do they order!?  Shamrock Pizza of course, duh!  The only thing I don't know is who picks up the bill...actually that's a lie, obviously it's the Italian because the Irish are lucky in that way, and every other way.  Now that we have that settled....  Truthfully,  I really don't care about any of that, I just want everyone to try my fun holiday idea this St Patrick's Day...!  Add to the celebration and get creative in the kitchen this year!  Even better news, a 1/6 of the crust is only 125 calories, 1.4g net carbs and 12g protein (add macros for toppings).

Ingredients for crust~
2 medium zucchini (about 12-16oz)
Dash Lite Salt
1 jumbo Egg
1 1/2 cup shredded Parmesan
Dash Pepper
Dash Garlic Powder
Pizza toppings, as desired

Grate Zucchini into bowl, add dash of Salt, let sit for 5 minute, drain off liquid and pour zucchini into light dish cloth and SQUEEZE out excess liquid.  Return to bowl and mix with Egg, Cheese, Pepper, and Garlic.  Pat into Shamrock shape on pizza stone or silpat lined cookie sheet, making sure all crust is same consistency in depth.  Bake at 450 for 13 or until lightly golden brown. Remove from oven and add toppings of choice, return to oven til cheese melts or veggies are crisp tender.  Enjoy  :)

Corned Beef Egg Rolls

If 100 Leprechauns were sitting down for their favorite meal, 99 of them would order Corned Beef Egg Rolls....what!?  It was an official scientific poll!  Lucky for me, I have enough Irish in my blood to appreciate a good decision, and would ask to join the party.  So kick up your heels and enjoy this fun craft project in the kitchen, and try your hand at these easy Corned Beef Egg Rolls.

Ingredients for Egg Rolls~
1 pound shredded Corned Beef
1 package Coleslaw
1 package Egg Roll Wraps
Spicy Mustard
Honey, if desired
Cooking Spray or Olive Oil

Line cooking sheet with parchment paper and spray with cooking spray.  Lay Egg Roll Wrapper on parchment paper and add desired amount of Corned Beef and Coleslaw in middle, fold up bottom corner over mixture, fold in sides, and roll up tightly.  Either spray with cooking spray or rub with Olive Oil.  Repeat with remaining ingredients.  Bake at 425 for 10 minutes, remove and flip over, continue to cook another 10 minutes or til golden brown.  Dip in Mustard if desired, stir Honey into Mustard to taste,if desired.  Enjoy  :)

Bangin Shrimp

Is there anything better than a hot spicy Shrimp!?  I just love that combo, and it's even more near and dear to my heart when I can make it healthy...and can go back for seconds without too much guilt!  #lifegoals  Each of these four hearty servings are only 245 calories, 9g net carbs, 47g protein and 7g fat...yes, you read that right, 47 grams of protein...you get a half pound of Shrimp in this recipe, how's that for an added bonus!?  Also, this whips together in a flash, pretty much a winner all the way around!  :)

Ingredients for 4 servings~
2 pounds large raw Shrimp (the larger the Shrimp the better)
1 Tablespoon Flour, sub with Corn Starch if you prefer
1 Tablespoon Olive Oil
2 Tablespoons Light Mayo
1 Tablespoon Sriracha, or to desired taste
8 cups or 1 bag prepared Coleslaw (I just buy a bag of pre-made in the Produce Department)
1 Green Onion, sliced

Remove shell and tail from Shrimp, toss with Flour (I used a gallon sized baggie and tossed it all in there, making it easy to shake and coat).  Add Olive Oil to hot skillet, add coated Shrimp and cook til pink.  Meanwhile, stir together Mayo and Sriracha til well combined, stir in half of sauce to skillet once Shrimp is fully cooked.  Add remaining sauce to Coleslaw and coat well.  Add Shrimp mixture to top of Coleslaw and garnish with Green Onions.  One serving is 1/2 pound or a 1/4 of the Shrimp and 2 cups or a 1/4 of the Coleslaw.  Enjoy  :)
