Beef and Cabbage Stew







     If I hear that I can make dinner all in one pot, I don't even care what goes in it...my joy runneth over at the idea of only cleaning one dish.  BUT, I have a fabulous recipe to fill that one food holder and YOU will feel joy at the flavor AND the ease.  And the macros are a bonus as well.  Each of the four, two cup servings are only 290 calories, 18.8g carbs, 6.9g fiber, 11.9g net carbs, 26.3g protein and 10.3g fat.  Enjoy this for lunch or dinner, and just relax knowing cleanup will be a breeze.  :)

Ingredients for four 2 cup servings~
1 pound 91% ground Beef
1/2 Onion, chopped
1 Tablespoon chopped Garlic
Dash Cayenne Pepper
4 cups Chicken Broth
3-4 large stalks Celery, diced
1 large (4oz) Carrot, diced
1 pound/6 cups chopped Cabbage
14.5oz can petite diced Tomatoes

     Add Beef, Onion, Garlic and Cayenne to soup pot and cook til Beef has browned, do not drain.  Add remaining ingredients and simmer for an hour or more til vegetables are softened.  Season with Salt and Pepper as desired.  Enjoy  :)
