Cassava Flour Taco Shell







      First of all I want to give a thank you and a shout out to www.ottosnaturals.com for sharing some of their superb Cassava Flour with me.  Otto's Cassava Flour is unlike anything your kitchen has ever experienced.  It is an all-natural, amazing, grain-free replacement for wheat flour and can often be used as a 1:1 substitute in countless recipes.  There are no fillers.  Only 100% Yuca (Cassava) and water are used to create this single-ingredient wonder.  Not to mention, they lovingly provide a Taco Shell recipe on the back of their bag that was created by Cara at www.forkandbeans.com.  When I saw that fun challenge, I knew I had to give it a try... #whynot!?  I channeled by inner Martha Stewart and tried my best to make her proud...my circles aren't perfect, so no one tell her...other than that, pretty darn good!  :)

Ingredients for 6 Taco Shells~
3/4 cup Ottos Naturals Cassava Flour (www.ottosnaturals.com)
1/4 teaspoon Pink Himalayan or Sea Salt (can sub with regular Salt)
2 Tablespoons Extra Virgin Olive Oil
1/3 cup Water

     Stir together Flour and Salt, add Olive Oil and Water and stir til well combined.  Knead a few times, picking up any crumbs.  If too dry, add a few drops more of Olive Oil.  Break dough into two equal balls, then break each ball into 3 more equal balls, for a total of 6.  Each ball should weight about 1 1/3oz.  (One tip I discovered, if ball is too dry to pat into circle, spray with a light coating of Pam Olive Oil Spray)  Add balls one at a time between two pieces of Parchment Paper and roll into circle, DO NOT use Wax Paper, it won't work.  Peel off Parchment Paper and lay on hot non stick skillet or cast iron skillet til starts to bubble, then flip to other side and brown equally.  Stack on plate and cover with hand towel til ready to serve.  Enjoy  :)

Tomatillo Taco Meat






     My Tomatillo Taco Meat is not just for Tuesdays ya know!  I would gladly eat this any day of the week.  These 6 hearty servings are only 288 calories, 15g net carbs and 22g protein.  Who knew Mexican fare could have such a healthy twist!?  So the next time Taco Tuesday rolls around, why not give my filling a whirl and see how this American girl does things!  Ole'

Ingredients for 6 hearty servings~
1 Tablespoon Nutiva Organic Red Palm Oil (can sub with Olive Oil)
1 medium sweet yellow Onion, diced
1 Tablespoon chopped Garlic
Dash Cayenne Pepper
1 pound 95% ~ 99% lean Ground Beef
8oz Kroger Mild Tomatillo Salsa Verde
15oz can Kroger Simple Truth Organic Dark Kidney Beans, drained
8.5oz can Kroger Supersweet Corn, drained
4oz can Ortega Fire Roasted Diced Green Chiles, drained

     Heat Oil in skillet, add Onion, Garlic and Cayenne til golden brown~may take 20 minutes to reach the perfect golden hue you are looking for.  Add Beef and cook thoroughly, drain fat off after browned.  Stir in Tomatillo, Beans, Corn and Chiles~heat thru and serve.  Try my home made Cassava Flour Taco Shells for a fun pairing with the perfect filling! Cassava Gluten Free Bread









     First of all I want to give a thank you and a shout out to www.ottosnaturals.com for sharing some of their superb Cassava Flour with me.  Otto's Cassava Flour is unlike anything your kitchen has ever experienced.  It is an all-natural, amazing, grain-free replacement for wheat flour and can often be used as a 1:1 substitute in countless recipes.  There are no fillers.  Only 100% Yuca (Cassava) and water are used to create this single-ingredient wonder.  Try my moist and delicious Cassava Gluten Free Bread and see if you can tell the difference.  Each of the 12 slices are only 145 calories, 11g net carbs and 5g protein.  This is one of those recipes that makes you happy to be alive!  :)

Ingredients for 12 slices Cassava Gluten Free Bread~
2 Tablespoons warm tap Water
2 Tablespoons Betterbody Foods Agave, (or Maple Syrup for strict Paleo diet)
1 package Rapid Rise Yeast

1/3 heaping cup diced Apple (I leave skin on)
7 jumbo or 10 medium Eggs
3 Tablespoons Nutiva Buttery Organic Coconut Oil, melted
1 cup Cassava Flour
1/3 cup Organic India Whole Husk Psyllium
1 teaspoon Bobs Red Mill Baking Soda
1 teaspoon Pink Himalayan Salt ( can sub with regular or Lite Salt)

     Mix first set of ingredients and let activate 10-15 minutes.  Meanwhile, add diced Apple to Magic Bullet/Blender and grind to Applesauce (add one of the Eggs in the blender with Apples to make easier to grind to desired consistency), add to bowl along with rest of ingredients as well as Yeast mixture, stir til just combined.  Use mixer to whip together til well incorporated (about 30 seconds), scraping down sides of bowl if necessary.  Pour into parchment lined bread pan.  I used a Pampered Chef bread pan, not sure if that makes a difference, but worth mentioning.  Bake at 350 for 45 minutes.  Enjoy  :)

Broccoli Brussel Grape Slaw Salad






     I just love Salads, and I love them even more when they are filled with crunch, fruit and nuts... and did I mention my passion for a sweet tangy Dressing as well!?  This bowl full of beauty is the perfect compliment to any meal, or could be a meal in and of itself if you want to top it with protein.  Each of these 12~ 1 cup servings are only 148 calories, 21g net carbs and 3g protein.  I serve mine with grilled Chicken or Salmon and consider it perfection on a plate.  :)

Ingredients for 12 ~ 1 cup servings~
2 large heads Broccoli, trimmed (net weight about 15oz)
24oz bag Brussels Sprouts, trimmed and halved (net weight about 1 pound)
3 cups (21oz) purple Grapes, halved
1 cup BRIANNA'S Blush Wine Vinaigrette
1 Tablespoon Sunflower Seeds for garnish

     Add trimmed Broccoli to bowl, add Brussels Sprout halves to food processor and grind to Slaw, add to Broccoli bowl along with Grapes and toss together.  Pour Dressing on top and sprinkle with Seeds for garnish.  Enjoy  :)

Low Carb Apple Crisp







     I don't care what time of year, Apple Crisp is always a favorite.  And now that there is Low Carb Apple Crisp it can be any time of year and any time of day!  Each of the 6 hearty servings are only 240 calories, 5g net carbs and 11g protein.  Those stats are simply unheard of in the dessert world!  And this is so healthy, I would totally look the other way if you decided to have it for breakfast.  So eat up kids, dessert first thing in the morning it is!!!

Ingredients for 6 servings~
6 cups ( 1 pound 13oz ) peeled and diced Zucchini
1/2 cup Swerve Granular or Confectioners Erythritol
3 Tablespoons Lemon Juice
Dash Cinnamon
- - - - - - - - - - - -
1 Quest Cinnamon Roll Protein Bar, torn into small pieces
1 scoop Quest Salted Caramel or Vanilla Milkshake Protein Powder
1/2 cup Swerve Granular or Confectioners Erythritol
1/2 cup Bobs Red Mill Almond Flour
1/4 cup Nutiva Buttery Organic Coconut Oil, melted
Dash Cinnamon
- - - - - - - - - - - -
1/4 cup chopped Pecans
Whipped Topping as garnish if desired, not included in macros

     Add first set of ingredients to bowl and toss til well coated and pour into greased casserole dish.  Add Quest Bar pieces to Magic Bullet and grind to coarse powder, add that and the rest of second set of ingredients to bowl and stir til well incorporated, sprinkle on top of Zucchini, and then finish by sprinkling with Pecans.  Bake at 350 for 45 minutes.  Enjoy  :)


Lemon Blueberry Almond Ice Cream






     Lemon Blueberry Almond Ice Cream...say that three times!  As long as I get to eat it, I would say it as many times as necessary.  This is such a light refreshing treat that it is a perfect afternoon snack or after dinner enjoyment.  The macros are a friendly 149 calories, 11.3g net carbs and 8.3g protein.  The next time you get a hankering for a sweet tooth fix, why don't you give this one a try!  :)

Ingredients~
6oz Blueberry carton
1/4 cup Swerve Confectioners Erythritol
1 Tablespoon Water
1 Tablespoon plus 1 teaspoon Chia Seeds
Dash Cinnamon
Dash Vanilla
1/2 cup Halo Top Lemon Cake Ice Cream
1 Tablespoon sliced Almonds

     Add Blueberries, Swerve and Water to a small nonstick saucepan, stir til well combined and bring to a simmer til juices start forming, about 5 minutes.  Stir in Chia Seeds and simmer til thick, stirring constantly, approximately 15 minutes.  When done stir in Cinnamon and Vanilla, store in fridge for up to a week.  Add Ice Cream to bowl, top with 1/4 cup Blueberry Jam, and finish by sprinkling with Almonds.  Enjoy  :)

Blueberry Chia Jam




     You are simply going to die over how easy this healthy Jam is to whip together... and did I mention it is SUGAR FREE...(but doesn't taste like it)!  This is simply too good to be true.  Each rich Blueberry Tablespoon is only 15 calories, 1.7g net carbs and .4g protein.  With stats like that jelly turns from a no-no to a yes-yes!!  You can even use it as a topping on Ice Cream, the possibilities are endless!  This might even be a fun project to do with your children, or just let you inner child loose to create on your own.  I beg you to try your hand at whipping together some Blueberry Chia Jam today!

Ingredients~
1 heaping scoop Vanilla Cake ABS Protein Pancakes
1/3 cup Egg Whites
1/3 cup 30 cal/cup Almond Milk
1 Tablespoon Cocoa

2 Tablespoons Swerve Confectioners Erythritol
2 Tablespoons Betterbody Foods Chocolate Peanut Butter Powder PB Fit
Dash Cinnamon
Dash Betterbody Foods Vanilla

1/2 Quest Double Chocolate Chunk Protein Bar, diced

     Mix first set of ingredients and drop by 1/4 cup on Pam sprayed skillet.  Meanwhile, blend second set of ingredients til thoroughly incorporated and drizzle over stack of pancakes, top with Protein Bar chunks.  Enjoy  :)

Hatch Green Chile Rellenos








     The smell of Green Chiles roasting is unique and mouth watering; in New Mexico, many people associate it with the start of the school year.  Green Chiles are grown in the summer and harvested in August, they take 80 days to mature.  After harvesting, the Chile is roasted for about 8-10 minutes in a tumbler til the skin blisters, making it easy to peel.  You can do it yourself at home, but why bother when you can get the best crop already prepared for you at your local Whole Foods...#sold!  Then take them home and create a recipe my mother taught me as a child, this is a dish I have always loved and reminds me of my mothers kitchen growing up.  I hope you will share in this special creation with me and start your own traditions!  :)

Ingredients for 12 servings~
6 jumbo Eggs
4oz diced Hatch Green Chiles
1.5 cup shredded Mexican blend Cheese or Cheddar and Monterey Jack
24oz low fat Cottage Cheese
60 Organic 365 Whole Foods Cheddar Cheese Crackers Squares, crushed (approx 3/4 cup)
Diced Green Onion, for garnish if desired
Diced Roma Tomato, for garnish if desired

     Mix Eggs, Chiles, half of Cheese, and crushed Crackers and pour into Pam sprayed casserole dish, bake at 350 for 45 minutes.  Remove and top with remaining cheese, and garnish with Green Onions and Tomato if desired.  Each of the 12 servings are only 164 calories, 6g net carbs and 13.4g protein.  Enjoy  :)

Hatch Chile Guacamole







     This Hatch Chile Guacamole is not only amazing in flavor, but exceptionally versatile!  You might think Guac is just for dippin', but you would be considered a little prejudice.  I actually used this in place of Salad Dressing for a phenomenal Tex Mex twist... and yes, I did make a happy plate.  First created by the Aztecs in what is now Mexico, this North American favorite quickly found it's place in our hearts.  Each of these 6 ~ 1/4 cup servings are only 53 calories, 2g net carbs and .7g protein.  What's your favorite way to use Avocados!? ...every way is my favorite way...  ;)

Ingredients for 6 servings~
8oz Kroger Tomatillo Salsa Verde Mild
Cilantro Leaves, as desired from 2 Tablespoons to a full Cup
2 Green Onions, diced
1 Roma Tomato, diced and drained on a paper towel for an hour or more
2 Avocado's (approx 12oz of flesh), peeled, seeded and mashed
4oz diced roasted Hatch Green Chiles, or 4oz can diced Green Chiles
Pink Himalayan Salt to taste, can sub with regular or Lite Salt

     Mix all together and chill in fridge til ready to use.  Each serving is 1/4 cup.  Enjoy  :)
