Pepper Jack Chili Rellenos







     Who says low carb is not fun, flavorful or fantastic!?  Whoever "they" are have got it all wrong!  My Pepper Jack Chili Rellenos hit that savory spot in the most yummy part of my belly.  Each of the 8 pieces are only 167 calories, 3.3g net carbs and 14g protein.  If you want to double your portion, then have it as a main course with a side salad.  The other great thing about this recipe is that it can easily be served for breakfast, lunch, dinner or all three!  ;)

Ingredients for 8 servings~
1 bag Quest Keto Pepper Jack Crackers, crushed (currently must be a Quest Labs member to order, if not signed up, then do so today by clicking on the link and look for Quest Labs Registration)
4 Jumbo Eggs
2 cups low fat Cottage Cheese
4oz diced roasted Hatch Green Chiles in season, or 4oz can diced Green Chiles
1 cup shredded Mexican Blend Cheese, or Cheddar and Monterey Jack Cheese
Diced Green Onion, as garnish if desired
Diced Tomato, as garnish if desired

     Stir together crushed Pepper Jack Crackers, Eggs, Cottage Cheese, Chiles, and HALF of Cheese.  Pour into Pam sprayed baking dish, bake at 350 for 45 minutes or til starting to brown.  Remove and sprinkle with remaining Cheese and let sit til melted, top with Green Onion and Tomato as garnish.  Enjoy  :)
