Keto Mint Brownies








     Is there anything more festive than Mint+Chocolate!?  You see it shining its star every Holiday Season.  However, no need to limit the exposure, Keto Mint Brownies are a wonder all year round.  Each of these 16 delights are only 245 calories, 18.8g carbs, 3.5g fiber, 13g sugar alcohol, 2.3g net carbs, 5g protein and 24.2g fat.  These are the perfect answer to Keto fat bombs...Brownie style.  :)

Ingredients for 16 servings~
1/2 cup/ 4oz Butter
2.8oz Lily's Extreme Dark Chocolate Bar
3 Extra Large Eggs, room temperature

1 cup Almond Flour
1/2 cup Cocoa
1 teaspoon Neilsen Massey Vanilla
1 heaping teaspoon Baking Powder
Dash Cinnamon

1/4 cup Heavy Whipping Cream


     Mix first set of ingredients til well blended and pour into parchment lined 8X8 pan, bake at 350 for 25 minutes, remove and cool.  Meanwhile mix together second set of ingredients.  When Brownie has cooled, slice in half horizontally, spread bottom layer with Frosting and stack on top of each other.  Lastly, add last set of ingredients to microwave safe bowl, and heat for 30 seconds and stir til well combined, spread over top, once Ganache is set it is ready to eat.  Garnish with Sprinkles if desired, not included in macros.  Enjoy  :)



Carrot Mug Cake






     Anna from IG=@baconbutterbourbon is the Queen of individual servings.  What a perfect talent to create solo desserts!  It makes for many friends.  Especially when you develop a Carrot Mug Cake that is only 380 calories, 30.2g carbs, 3.3g fiber, 24g sugar alcohol, 2.9g net carbs, 11.6g protein, 35g fat.  This amazing treat is a real winner all the way around.  To share or not to share...that is the question... ;)

Ingredients for one serving~
1 medium fresh grated Baby Carrot (approx 10g)
1 Tablespoon Butter, softened to room temperature
1 Tablespoon Almond Flour
1 Tablespoon unsweetened shredded Coconut
1 Extra Large Egg

1/2 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla
3g crushed Walnuts (approx one heaping teaspoon)
1oz/2 Tablespoons Cream Cheese, softened to room temperature

     Combine the first 10 ingredients til well blended, reserve a few Walnut crumbles for garnish if desired.  Pour into greased 8oz Ramekin or 2 cup Tupperware and microwave 1 minutes.  Meanwhile, stir together Cream Cheese and Confectioners til smooth, frost when ready and garnish with reserved Walnut crumbles.  Enjoy  :)

Keto Chorizo Nachos







     I love experiencing new flavors.  I have never tried Chorizo and was thrilled to give it a whirl.  So glad I am open minded, because this turned out simply "fabulouso".  Each of the four servings are only 469 calories, 6.8g carbs, .5g fiber, 6.3g net carbs, 25g protein and 37g fat.  So many things to do with this concoction, but my number one is nachos.  What is your fancy!? ...hopefully it is to try new things...

Ingredients for four servings~
9oz Beef Chorizo
1 diced Bell Pepper
8 Extra Large Eggs
1/2 cup Cottage Cheese
1/4 cup shredded Cheese
- - - - - - - - - - - -
Mixed Greens
Green Onion
Sliced Avocado
Salsa
Cheese
Ranch Dressing
Quest Nacho Protein Chips

     Add Chorizo and Pepper to skillet and heat til cooked thru.  Stir in Eggs til cooked thru, stir in Cottage Cheese and top with shredded Cheese.  Divide into four equal portions.  Choose from bottom list of ingredients to serve with, none are included in macros.  Feel free to create your own additions.  Enjoy  :)

Low Carb Cranberry Sauce






     Tis the Season to bring out the Cranberries.  They adorn all Holiday Tables.  Usually loaded with sugar to off set the tart, my Low Carb Cranberry Sauce proves to be a sugar free delight.  Each 1/4 cup is only 20 calories, 23g carbs, 2g fiber, 18g sugar alcohol, 3g net carbs, .2g protein and .1g fat.  With these macros, not to mention their colorful display, this is a must on every Buffet line.  ;)

Ingredients for 8 servings~
12oz raw Cranberries
3/4 cup Water
3/4 cup Lakanto Confectioners Monk Fruit, more if desired~use code Paige20 for discount at checkout
2 Tablespoons Orange Juice
Dash Orange Extract (optional)

     Add all ingredients to saucepan and simmer til all Berries are burst and sauce has thickened, approximately 10-15 minutes.  Enjoy  :)

2 pounds chopped Zucchini

     Mix first set of ingredients, toss til well coated and pour into 8X8 baking pan.  Meanwhile, microwave Quest for 10 seconds and pat as flat as possible, bake at 350 for 5 minutes on lined cookie sheet, cool and grind to powder in blender.  Add to bowl along with remaining second set of ingredients and cut in butter til well blended and fully incorporated.  Crumble on top of Zucchini and bake at 350 for 45 minutes.  Enjoy  :)

Cranberry Orange Mug Cake






     Anna from IG=@baconbutterbourbon did it again, I saw her creation and I had to go to work!  This is so moist and delicious, and filled with Holiday Cheer.  Following her lead, this creation is only 225 calories, 27.7g carbs, 1g fiber, 24g sugar alcohol, 2.7g net carbs, 9g protein and 18.5g fat.  Either consume solo, or add a favorite topper like Butter or Cream Cheese.

Ingredients for a singe serving~
1 Tablespoon Butter, softened to room temperature or melted

5 fresh Cranberries, finely chopped

Pecan Pie Cake










     I just love making new friends, especially when they are good cooks and super creative.  Anna, IG=Bacon Butter Bourbon, is the Queen of the single serving mug cake, and I bow my kitchen utensils to her.  Thru her inspiration, I tried my hand at a Pecan Pie Cake.  It turned out so fab, I am sure I will be trying many more of her tantalizing temptations.  My version is 350 calories, 40.5g carbs, 13.4g fiber, 24g sugar alcohol, 3.1g net carbs, 10.1g protein and 30.1g fat.  Make sure to look her up on the #gram and see what else she has waiting for your belly.  ;)

Ingredients for one serving~
1 Tablespoon Butter, softened to room temperature or melted
1 Tablespoon Almond Flour
1 Extra Large Egg
1-2 Tablespoons Lakanto Golden Monk Fruit~use code Paige20 for discount at checkout
1/2 teaspoon Baking Powder
Dash Maple Extract, sub with Vanilla
Dash Cinnamon
2 Tablespoons (14 grams) Salted Roasted Pecans, sub with regular Pecans

Whipped Topping, for garnish if desired, not included in macros

     Mix first 7 ingredients in bowl til well incorporated.  Spray 1 cup circular glass tupperware with Pam, line bottom with Pecans.  Gently drop batter over top as to not disturb the Pecan lining.  Microwave 1 minute, flip on plate to cool, scrape out any residual drippings on top.  When ready, top with Syrup and Whipped Topping if desired (not included in macros).  Enjoy  :)








Keto Bacon Fried Cabbage







     If you are looking for a hearty savory lunch or din din, then my Keto Bacon Fried Cabbage hits the spot.  Each of these four large servings are only 579 calories, 12g carbs, 4.4g fiber, 7.6g net carbs, 47g protein and 36g fat.  If you are needing a little more fat, then add Butter or increase the Bacon Grease.  This falls into the comfort food category, and it may even be at the top of the list!

Ingredients for four servings~
2 Tablespoons Bacon Grease
1/4 cup chopped Onion
1 Tablespoon chopped Garlic
Dash Cayenne
Small head chopped Cabbage, about 1.5 pounds
2oz Bacon Bits
1 pound 80/20 ground Beef, browned and drained
4oz Cheese, grated
1/2 diced Red Bell Pepper
Dash Salt
Dash Pepper

     Add Grease to skillet, along with Onion, Garlic and Cayenne til lightly browned.  Stir in Cabbage til crisp tender, add in Bacon and Beef til fully incorporated and heated thru.  Top with Cheese, Bell Pepper and season as desired.  Enjoy  :)
