Refried Chicken Enchilada Spaghetti Squash






     Refried Chicken Enchilada Spaghetti Squash !!!  This turned out FABULOUS !!!  Put it on your must try list and give it a whirlie as soon as possible !!!  Cheers  ;)

Ingredients~
1 Spaghetti Squash, cut in half lengthwise and scrape out seeds and strings
Refried Beans, desired amount
2-3 grilled Chicken Breasts, diced
1/2 can mild Enchilada Sauce
1 small can mild diced Green Chili's
Shredded Cheddar Cheese
Finely diced Purple Onion

     Cut Squash in half lengthwise and scrape out seeds and strings, place face down in foil lined cake pan and bake at 350 for an hour.  Remove from oven and spread desired amount of Refried Beans in each shell, then gently fluff spaghetti strands from sides.  Meanwhile, mixed diced Grilled Chicken, Enchilada Sauce and Green Chili's in a bowl and heat til warmed through.  Pour mixture evenly on top of each Squash.  Top with desired amount of Shredded Cheese and diced Purple Onion.  Enjoy  ;)

Vanilla Almond Sea Salt Brownies with Cream Cheese Frosting





     Vanilla Almond Sea Salt Brownies with Cream Cheese Frosting!!!  NICE !!!  I love using Quests new Sea Salt Potato Chips, ... especially in BROWNIES !!!  YUMMO  This recipes makes 9 Brownies, each one is 121 calories, 7g net carbs and 16.8g protein !!!  That's one heck of a deal !!!  Great Macros Great Flavor !!!  Make some today ;)

Ingredients for Brownie~
1 Vanilla Almond Quest Bar, cut into several small pieces, set aside
1/2 cup Oats, ground in Magic Bullet
1 Sea Salt Quest Potato Chip, ground in Magic Bullet til powdered
1/2 cup Egg Whites
1/2 cup baked and mashed Sweet Potato
6oz Fage 0% Greek Yogurt
1/4 cup Unsweetened Cocoa Powder
1 scoop Chocolate Isoflex, from Supplement Giant in Wichita
1/2 teaspoon Baking Powder
10 drops Chocolate Stevia
Dash Cinnamon
Dash Vanilla

     Stir together all ingredients, except Vanilla Almond Quest Bar pieces.  Spray 9 X 9 pan with Pam and spread half of batter in pan, top with Quest Bar pieces, and top with remaining batter.  Bake at 350 for 20 minutes.  Remove, cool and frost with Cream Cheese Frosting.  Chill in fridge til ready to eat!  Enjoy  ;)

Ingredients for Cream Cheese Frosting~
2 Tablespoons reduced fat shredded Coconut, ground to powder in Magic Bullet
2 Tablespoons fat free Cream Cheese, softened in microwave til melted
1/2 cup lowfat Cottage Cheese
1 scoop Vanilla Isothority Protein Powder, from Supplement Giant in Wichita
10 drops Vanilla Stevia

    Mix all together in Magic Bullet and chill in fridge til ready to use.

Sea Salt Caramel Chocolate Chunk Protein Cookies





     Sea Salt Caramel Chocolate Chunk Protein Cookies!!!  Thank goodness Quest came out with Sea Salt potato chips so we can play with an all new perfect flavor in our cookies !!! This batch makes 12 and each cookie has 60 calories, 4.5g net carbs, and 7.6g protein.  ;)

Ingredients~
1 Medjool Date, soaked in water 30 minutes~ drain and remove pit
1 Tablespoon Cashew pieces
1 Tablespoon reduced fat shredded Coconut
1 package Sea Salt Quest Potato Chips, crushed in the bag
1 scoop Isothority Protein Powder, purchased at Supplement Giant in Wichita
1/2 cup liquid Egg Whites
1/2 cup Oats, ground in Magic Bullet
1/2 teaspoon Baking Powder
10 drops Toffee Stevia drops
Dash Cinnamon
Dash Vanilla
1 Double Chocolate Chunk Quest Bar,chopped into small pieces and divided into 12 equal parts

     Drain soaking Medjool Date after 30 minutes of soaking in water, remove pit and grind in Magic Bullet with Cashews and Coconut, add a Tablespoon or two of water or Almond Milk if necessary to make smooth caramel, set aside.  In mixing bowl add Quest Potato Chips after grinding to powder in Magic Bullet, then add Protein Powder, Egg Whites, ground Oats, Baking Powder, Stevia drops, Cinnamon and Vanilla, stir til blended well.  Then fold in caramel and drop onto Silpat lined cookie sheet to yield 12 cookies. Bake at 350 for 5-7 minutes, depending on how done you like your cookies.  Remove and press  Quest Chocolate Chunks equally into each cookie.  Enjoy  ;)

Banana Nut Chocolate Chip Cheesecake with Cream Cheese Frosting






     Banana Nut Chocolate Chip Cheesecake with Cream Cheese Frosting!  Hello smiles in my belly!  The best part is that for an 1/8 of the Cheesecake it is only 131 calories, 6.4g net carbs and 15.6g protein. Start your day right with this little piece of heaven !!!  ;)

Ingredients for Cheesecake~
1 Banana Nut Quest Bar, torn into small pieces
2 Tablespoons 30 cal/cup Almond Milk
1/4 cup reduced fat shredded Coconut, ground to powder in Magic Bullet
1 pouch Cinnamon Roll Oat Fit or 1/3 cup Oats, ground to powder in Magic Bullet
1/2 cup Egg Whites
3oz Baby Carrots, ground in Magic Bullet
1/4 cup lowfat Cottage Cheese
6oz Carb Masters Banana Creme Pie Yogurt
1 scoop Vanilla Isothority ~ purchased at Supplement Giant in Wichita
Cinnamon to taste
Vanilla to taste
1/4 cup Organic Sweet Raw Cacao Nibs
Unsweetened Baking Chocolate, scraped with fork for garnish

     Melt Quest Bar and Almond milk in mixing bowl for 20 seconds, stir til smooth.  Repeat if necessary til melted completely.  Add the remaining ingredients to the bowl, except Chocolate garnish, and stir til blended well.  Bake in springform pan sprayed with Pam at 350 for 20 minutes, remove and cool in fridge til chilled completely.  Meanwhile make frosting during baking, and frost when chilled, top with Chocolate shavings.  Store in fridge.  Enjoy  ;)

Ingredients for Frosting~
1/2 cup low fat Cottage Cheese
1 scoop Isothority, purchased at Supplement Giant in Wichita
1 Tablespoon reduced fat shredded Coconut, blend in Magic Bullet til powdered
2 Tablespoons Fat Free softened Cream Cheese
10 drops of Vanilla Stevia

     Whip all ingredients in Magic Bullet til well blended and store in fridge til chilled, frost cheesecake when chilled.  Enjoy  ;)

White Chocolate Raspberry Cheesecake for 2





     White Chocolate Raspberry Chocolate Cheesecake for 2!!!  Each Cheesecake has 213.5 calories, 7.2g net carbs, and 29.3g protein.  Life just keeps gettin betta !!!  ;) ... or berrier ...

Ingredients~
1 White Chocolate Raspberry Quest Bar
2 Tablespoons unsweetened Almond Milk
1/2 cup low fat Cottage Cheese
1 scoop Vanilla Isothority Protein Powder ( available at Supplement Giant Wichita)
10 drops French Vanilla Stevia
1/2 cup fresh Raspberries
2 Tablespoons Soy Whip

      Tear Quest Bar into pieces and place in bowl with Almond Milk and microwave for 30 seconds, stir til smooth.  Repeat process if necessary til melted thoroughly.  Dived between 2 small Pam sprayed Ramekins, about 2 Tablespoons of batter per dish.  Bake at 350 for 5-8 minutes, or until set.  Remove and invert each one on plate to cool.  Meanwhile, blend in Magic Bullet Cottage Cheese, Protein Powder, Stevia and 1/4 cup Raspberries til smooth and set in freezer for 30 min to solidify.  Once chilled, remove and put 1/4 cup filling on top of each crust, then dot with 5 Raspberries on each and garnish with Soy Whip.  Enjoy  ;)

Pumpkin Chocolate Chip Brownies with Cinnamon Roll Frosting





     Pumpkin Season lives on!!!  Holla !!!   Hello Pumpkin Chocolate Chip Brownies with Cinnamon Roll Frosting, get into my life !!!  This recipe makes 9 frosted brownies, each piece is an amazing 133 calories, 6.5g net carbs, and 17g protein.  Praying Fall never ends !!!  ;)

Ingredients for Brownies~
2 cups Pumpkin or 15oz can
3 scoops Vanilla Isothority Protein Powder
1/4 cup Cacao Nibs
1 teaspoons Baking Soda
1/2 cup Oats, ground
1/4 cup Whole Husk Psyllium
1/2 cup Egg Whites
1/2 cup Erythritiol
Soy Whip for garnish, if desired

     Mix all ingredients together in bowl and pour into 9X9 sprayed with Pam and bake at 375 for 30-35 minutes.  Remove and cool,  Frost and serve or chill in fridge overnight and then serve, store extra in fridge.  Garnish with Soy Whip if desired.  Enjoy  ;)

Ingredients for Frosting~
1 Cinnamon Roll Quest Bar, torn into pieces
1/4 unsweetened Almond Milk
1 scoop Vanilla Isothority Protein Powder
10 drops Cinnamon Vanilla Stevia

      Mix Quest bits and Almond Milk in bowl and microwave for 30 seconds, stir til smooth.  Repeat this step if necessary til melted thoroughly.  Then stir in Protein Powder and Stevia til smooth.  Chill in fridge til ready to frost Brownies when cool.

Toffee Peanut Butter Chocolate Chip Cookies









     Toffee + Peanut Butter + Chocolate Chips= What's Up !!!  :0  This is so easy and so yummy !!! All four cookies are 259 calories, 6g net carbs, and 22.6g protein, head to the kitchen right meow !!!:)

Ingredients~
1 Peanut Butter Supreme Quest Bar
1 teaspoon Toffee Peanut Butter Nuts n More ( can be found locally at GoTime Training)
20 Lily's Chocolate Chips sweetened with Stevia

     Divide Quest Bar into 4, and pat into circles and bake at 350 for 5 minutes.  Remove and pat down slightly, cool and frost each with 1/4 teaspoon Peanut Butter and top with 5 Chocolate Chips.  Enjoy  ;)

Vanilla Frosted Peanut Butter Chocolate Chip Overnight Oats







     I just discovered the world of Overnight Oats!!!  YUMMY  As with any nice outfit, accessories are EVERYTHING !!!  So I had to top these babies off with a few chocolate chips and a little soy whip for good looks ... and good eats ...  ;) Try some Vanilla Frosted Peanut Butter Chocolate Chip Overnight Oats for 262.5 calories, 16g net carbs and 32g prtoein!  ;)

Ingredients~
1/4 cup Oats
1 scoop Vanilla Isothority Protein Powder
1 Tablespoon Vanilla Frosting Peanut Butter Powder from My Oatmeal

Apple Pie Stuffed Granny Smith with Apple Crumble







     With Fall comes all things Apple !!!  Welcome to my Apple Pie Stuffed Granny Smith with Apple Crumble~ all for 257 calories, 22.5g net carbs, and 23g protein.  An Apple a day blah blah blah ...  :/

Ingredients~
1 Apple Pie Quest Bar
2 Granny Smith Apples, cut in half and hollowed out
1 Tablespoon Coconut Oil
2 Tablespoons Oats
1 scoop Vanilla Isothority Protein Powder, Found at Supplement Giant Wichita
10 drops Cinnamon/Vanilla Stevia Drops
2 Tablespoons Soy Whip, for garnish

      Slice off top 1/3 of each apple and core out the centers, separate fruit from the core and save the fruit.  Chop Quest Bar in half and tear into pieces and stuff equally into each apple shell.  Top with the top 1/3 apple part and seal the two stuffed apples in aluminum foil in pan and bake at 350 for 45 minutes to an hour, depending on how soft you like your apples.  Meanwhile, melt Tablespoon Coconut Oil in skillet and cook remaining apple parts til golden brown.  Stir in Oats, Stevia drops, and Protein Powder til crumbly. When apples finished baking, remove and set lid to the side and top with apple crumbles, and finish with garnish of Soy Whip ( or Arctic Zero  or Wink Frozen Ice Cream, found at some Grocery Stores or Walmart).  Enjoy  ;)

Overnight Pumpkin Toffee Oatmeal









     Pumpkin week continues!!! Yeah us !!!  This Overnight Pumpkin Toffee Oats can be yours for 345 calories, 27g net carbs, and 34.4g protein !!!  Get to the kitchen tonight and get your smile on in the morning  ;)

Ingredients~
1/2 cup Oatmeal ( preferably not quik cooking)
1 scoop Vanilla Isothority Protein Powder ( found at Supplement Giant Wichita)
1/4 cup Pumpkin
1 cup Almond Milk ( I prefer 30 cal/cup)
1 teaspoon Chia Seeds
1 teaspoon Flax Seeds
Dash Cinnamon
Dash Vanilla
Dash Pumpkin Pie Spice
10 drops Toffee Stevia Drops

     Mix all together and place in sealed container overnight!  Wake up and Enjoy  ;)

Girl Scout Samoas












     The Cookie Gods must be smiling down upon me because I just created a piece of heaven in my kitchen !!!  These Girls Scout Samoas are the best cookie I have EVER eaten, ... those little girls are going to be furious about my knock off cookie ... so don't tell them !!!  The best part is that they are only 224 calories, 7g net carbs and 21g protein!  ... I think I deserve a special badge on a green sash ...

Ingredients~
1 Vanilla Almond Quest Bar
1 teaspoon Caramel ( note~ Caramel instructions below)
20 Lily's Stevia Sweetened Chocolate Chips
1 teaspoon reduced fat Shredded Coconut

     To make a batch of simple Caramel, soak 1 Medjool Date in water for 30 minutes, drain and remove pit.  Blend in processor with 1 Tablespoons Cashews, 1 Tablespoon reduced fat Shredded Coconut, and 1-2 Tablespoons Water til smooth, store in fridge.  Now for the cookies, unwrap Quest bar and divide into 4 equal parts.  Microwave on Pam sprayed plate for 10 seconds, remove and shape into circles with hole in the middle.  Bake the 4 cookies for 5 minutes at 350 degrees.  Remove and while still warm press down slightly so the hole is very small.  Top each cookie with a 1/4 teaspoons Caramel, then press 5 Chocolate Chips into each cookie and finish by sprinkling a 1/4 teaspoon Coconut on top of each cookie to finish it off!  These are the best cookies I have EVER eaten, perfectly soft and chewy with all the bite of a good Almond, Caramel, Chocolate and Coconut mouthful a girl could ever dream of !!!  Enjoy  ;)
