Tom Thumb Frosted Plum Protein Cake










     What does a girl do when she ends up with a dozen plums!!!???  ... make a Plum Cake of course!  This made 9 pieces and weighs in per piece at 155 calories, 12g net carbs, and 16g protein.

Ingredients in Frosting~
1/2 cup Almond Milk ( 30 cal/cup)
1 Mixed Berry Quest Bar, torn into small chunks
1 scoop Vanilla Isothority Protein Powder

     Mix Almond Milk and Quest Bar bits in microwave safe bowl, stir and microwave for one minute.  Repeat until Quest Bar has melted and mixture is smooth. Then add Protein Powder, stir to combine, and set in fridge to cool.

Ingredients for Cake~
1/2 cup reduced fat shredded Coconut
1 cup Oats
2 scoops V-Core Orange Creamsicle Protein Powder
2 teaspoons Cinnamon
1 teaspoon Baking Powder
4 oz chopped Fuji Apple
1/2 cup Egg Whites
1/2 cup Almond Milk ( I use the 30 cal/cup)
6oz 0% Fage Yogurt
Dash Vanilla
8oz chopped Plums

     Put Coconut and Oats in Magic Bullet and grind til powdered, add Protein Powder, Cinnamon and Baking Powder and regrind to blend thoroughly.  Add to mixing bowl.  Then add Egg Whites and diced Apple to Magic Bullet and grind til smooth, add Almond Milk, Yogurt and Vanilla and re blend til smooth.  Add wet ingredients to dry, as well as diced Plums, stir to combine and pour in 9X9 Pam sprayed pan and bake at 350 for 25 minutes.  Let cool, frost  and chill overnight in fridge.  Note: If batter is too rich, add another 1/4-1/2 cup Almond Milk for a less intense flavor, and tastes best if chilled over night.  Enjoy  ;)
