Toffee Frosted Pumpkin Chocolate Chunk Cookies










     The sun is going down earlier, coming up later, and the shadows are getting longer ... that can only mean one thing... PUMPKIN SEASON IS UPON US !!! YIPPEE  Each Toffee Pumpkin Chocolate Chunk cookie has 43 calories, less than 1g net carb, and 8g protein! The batch makes 12 cookies that include a heaping Tablespoon of batter, 1/12 Double Chocolate Chunk Quest Bar, and 1/2 teaspoon Frosting. ;)

Ingredients for Frosting~
1/2 scoop Vanilla Isothority Protein Powder from Supplement Giant Wichita
2 Tablespoons Vanilla Almond Milk, ( I use the 30 cal/cup)
5 drops Toffee Stevia

     Mix all together and chill in fridge til ready to use.  Then use 1/2 teaspoon per cookie to frost.

Ingredients for Cookie~
1 Double Chocolate Chunk Quest Bar, chopped into small bits, divided equally into 12, set aside
2 scoops Vanilla Isothority Protein Powder from Supplement Giant Wichita
6 Tablespoons Egg Whites
1/2 cup Pumpkin
Dash Pumpkin Pie spice
Dash Vanilla

     Mix everything together, except for Quest Bar bits.  Drop by rounded Tablespoon onto  microwave safe plate that has been sprayed with Pam for 20-30 seconds.  Remove and immediately press Chocolate Quest bits into each cookie evenly.  Cool and frost each with 1/2 teaspoon Toffee Frosting.  Eat or Chill, but mostly Enjoy ;)
