Patriotic Brownie Truffles






     This recipe has a twist to it.  Sooooo, I have a couple choices for you.  You can either make my Star Spangled Brownies (https://foodfitnessbypaige.blogspot.com/2018/06/star-spangled-brownies.html) and use the remnants (I stamp out star shaped Brownies), OR start from scratch and make your own.  I suggest using the remnants and getting more bang for your buck!  Either way, celebrate your devotion to the Country with these magical spheres.  #USA

Ingredients for Patriotic Brownie Truffles~
1/4 cup Coconut Oil, melted
1/4 cup Oats, ground to powder
1/4 cup ground Flax Seed
1/4 cup Almond Flour
1/2 cup unsweetened Cocoa
1/2 cup/4oz unsweetened Applesauce
3 Extra Large Eggs
1 small (approx. 3oz pulp) ripe Avocado
1/2 cup Lakanto Golden Monk Fruit
1 teaspoon Baking Powder
1 teaspoon Lite Salt
Dash Cinnamon
Dash Vanilla
- - - - - - - - - - - -
4 Tablespoons Butter, softened to room temperature
4oz Cream Cheese, softened to room temperature
1/2 cup Lakanto Confectioners Monk Fruit
Dash Butter Extract
Dash Vanilla Extract
- - - - - - - - - - - -
2 Tablespoons Lily's stevia sweetened Chocolate Chips, any flavor
Patriotic Sprinkles, if desired, not included in macros

     Beat together first set of ingredients with mixer til thoroughly combined, pour into parchment lined 9X13 and bake at 375 for 15-17 minutes, remove and cool.  Meanwhile, whip second set of ingredients with mixer til fluffy, frost cooled Brownies, then crumble into a bowl and mix together til fully incorporated, scoop out by rounded Tablespoons, roll into a ball, melt Chips in baggie, snip corner, drizzle with melted Chocolate and top with Patriotic Spinkles if desired.  Store in fridge.  Enjoy  :)

Aquafaba Mousse'







     Serious question.  What do you know about Aquafaba!?  Well basically, it's the drained juices from a can of Garbanzo Beans.  And, if you're interested in calories, there's about 3-5 calories per Tablespoon, the concentration of everything else is so low as to not even register on a US FDA food label.  When beaten, it whips into a type of foam meringue, similar to a whipped cream.  And, it can be used in various ways.  Today, I had the pleasure of experimenting with fabulous results.  My four 1/2 cup servings of Aquafaba Mousse' are only 228 calories, 44g carbs, 14.3g fiber, 22.6g sugar alcohol, 7.1g net carbs, 3.6g protein and 16.8g fat.  Totally worth the try, especially if you are fond of French Silk Pie!

Ingredients for four 1/2 cup servings~
1 cup Aquafaba~drained from one can Garbanzo Beans (try my simple Pepper Hummus with the left overs:  https://foodfitnessbypaige.blogspot.com/2019/05/pepper-hummus.html
1/4 cup Lakanto Confectioners Monk Fruit~use code Paige20 at checkout for discount
1 slightly rounded cup/200g Lily's Semi-Sweet Chocolate Chips (sub with Dark or Milk Chocolate as desired)
2 teaspoons Coconut Oil
Dash Cinnamon
Dash Vanilla

     Pour Aquafaba and Confectioners in bowl and whip til stiff peaks form (I use my Mix Master), should take 5-10 minutes at the most.  Meanwhile melt Chips and Oil in microwave safe dish for increments of 20 seconds, or til just softened, stir til smooth and cooled, add to beaten Aquafaba along with Cinnamon and Vanilla.  Continue beating til fully incorporated, pour by 1/2 cup portions into serving bowl, chill til set.  Add garnishments if desired, not included in macros.  Enjoy  :)

Cannoli Brownie







     If you want to feel all fancy, then check these babies out!!!  Simple yet elegant.  Each of these two sleek desserts are only 245 calories, 28.5g carbs, 11g fiber, 14.5g sugar alcohol, 3g net carbs, 12.8g protein and 17.5g fat.  Plus, check out the fun little design idea for creating the perfect cylinder!  :)

Ingredients for two Cannoli's~
1 Brownie Quest Bar, cut in half equally
1/4 cup/2oz/4 Tablespoons Cream Cheese, softened to room temperature
2 Tablespoons Sour Cream
2 Tablespoons Lakanto Confectioners Monk Fruit~use code Paige20 at checkout for discount
30 Lily's Semi-Sweet Chocolate Chips (sub with Dark or Milk Chocolate)
Sprinkles, if desired, not included in macros

     Cut Bar in half equally, microwave for 12 seconds on cooking spray coated plate, soften each half into oval's on silpat lined cookie sheet.  Meanwhile roll up aluminum foil like a cigar, spray with cooking spray, lay down center of oval and wrap up the sides around the foil, pinching top edges together.  Bake at 375 for 5 minutes.  Let cool completely, then gently remove the foil, leaving a hollow cylinder.  Meanwhile, stir together the Cream Cheese, Sour Cream and Monk Fruit til smooth, add to baggie, snip the corner and pipe into empty cylinder.  Lastly, add chips to baggie and microwave 12 seconds til soft, repeat if necessary, snip corner and drizzle over the top's of each.  Garnish with sprinkles if desired, not included in macros.  Store in fridge.  Enjoy  :)

Raspberry Glazed Donuts







     If fancy is your game, then Raspberry Glazed Donuts are your players.  These delicious spheres really take the cake.  And they are macro friendly too.  Each of the 9 Donuts are only 166 calories, 19.2g carbs, 2.6g fiber, 14.2g sugar alcohol, 2.4g net carbs, 4.7g protein and 13.9g fat.  The next time you want to make your first meal of the day your best meal of the day, I suggest giving these a try!  :)

Ingredients for 9 Donuts~
4oz Butter, softened to room temperature

1/4 cup Sour Cream
1 cup Almond Flour
1 teaspoon Baking Powder
Dash Cinnamon

27 Raspberries, cut in half

1 Tablespoon freshly squeezed Orange Juice, or reduced sugar OJ

     Whip Butter and Monk Fruit in mixing bowl, then add in Eggs and Sour Cream to blend well.  Add Flour, Baking Powder, Cinnamon and Vanilla til fully incorporated.  Drop batter by 1/4 cup in WELL greased Donut tin, making sure to slightly UNDER FILL not over fill.  Press 6 Raspberry halves in each tin equally spaced in batter.  Bake at 375 for 14 minutes.  COOL COMPLETELY before attempting removal from tin, freeze if necessary before removal, these can be very delicate with fruit.  When ready, using second set of ingredients, mix Confectioners and OJ til dissolved and smooth, frost as desired, and garnish with Sprinkles if desired.  Enjoy  :)
   

Double Chocolate Chunk Pizza






 
     I'm not sure anything could be easier than Double Chocolate Chunk Pizza.  This whips together in a flash.  AND, the rich flavors are off the charts!  The ENTIRE thing is only 308 calories, 33.3g carbs, 16.5g fiber, 12g sugar alcohol, 4.8g net carbs, 21.9g protein and 20.2g fat.  Try this the next time you have a hankering for something chocolate, and find yourself amazingly satisfied!  :)

Ingredients for one serving~
1 Double Chocolate Chunk Quest Bar
1 teaspoon Butter, softened to room temperature
1 Tablespoon Cream Cheese, softened to room temperature
1 teaspoon Lakanto Confectioners Monk Fruit, use code Paige20 for discount at checkout
18 Lily's stevia sweetened Milk Chocolate Chips, sub with Dark or Semi-Sweet
1 teaspoon chopped Walnuts

     Unwrap Bar and microwave on cooking sprayed surface for 12 seconds, pat into circle on silpat lined cookie sheet.  Bake at 350 for 5 minutes.  Meanwhile, stir together Butter, Cream Cheese and Confectioners til smooth, spread on cooled Bar, top with Chocolate Chips and Nuts, cut into triangles if desired.  Enjoy  :)

Patriotic Breakfast Muffins

1/2 cup chopped Strawberries (about 4 medium-large)

     Whip Butter and Monk Fruit in mixing bowl, then add in Eggs and Sour Cream to blend well.  Add Flour, Baking Powder, Cinnamon and Vanilla til fully incorporated, then stir in berries.  Drop by 1/4 cup in patriotic cupcake lined tin, sub with desired liners.  Bake at 350 for 27 minutes.  Enjoy  :)

Milk Chocolate Chips







      Have you tried Lily's new stevia sweetened Milk Chocolate Chips!?  They are simply divine...and even "diviner" wrapped in a cookie!  Each of these amazing 29 cookies are only 65 calories, 6.3g carbs, 1.4g fiber, 3.8g sugar alcohol, 1.1g net carbs, 1.8g protein and 5.4g fat.  It's not a stretch to say, these literally melt in your mouth.  Put this on your must try list pronto!  ;)

Vanilla Fruit Pizza







     If you are looking for a light refreshing treat, this will hit the spot perfectly.  Simple to make and excellent macros for any day of the week.  The entire thing is only 283 calories, 25g carbs, 15g fiber, 6g sugar alcohol, 4g net carbs, 21g protein and 18g fat, macros do not include fruit garnishments.  Make a party of it and let everyone top their own!  Enjoy  :)

Ingredients for one serving~
1 Cinnamon Roll Quest Protein Bar, sub with favorite flavor
1 teaspoon Butter, softened to room temperature
1 Tablespoon Cream Cheese, softened to room temperature

Chopped fruit, as desired for garnishment

     Unwrap Bar, set on cooking spray lined microwave safe plate and microwave for 12 seconds, remove and lay on silpat lined cookie sheet and pat into circle.  Bake at 350 for 5 minutes.  Meanwhile, stir together Butter, Cream Cheese and Confectioners til smooth, spread on cooled Bar.  Top with fruit as desired.  Enjoy  :)

Bacon Ranch Chicken Wraps







     If you are serving a crowd, I have an easy suggestion.  Might you consider whipping up a batch of Bacon Ranch Chicken Wraps, and win everyone over with your top notch cooking skills.  This is so simple, yet so flavorful.  If low carb is your game, then cheers to another bonus with this people pleasing dish.  Dinner or lunch, you'll love this a bunch.

Ingredients for 8-10 servings~
4 pounds Chicken Breasts
2 packets Ranch Seasoning
1 pound Bacon
2 8oz packages Cream Cheese
Joseph's Lavish Bread
Avocado slices

     Add Chicken to crock pot, sprinkle with Ranch packets, cook on low for 8 hours.  Meanwhile, cook and crumble Bacon, set aside.  When Chicken is done cooking, remove from crock pot, shred and stir in Bacon and Cream Cheese til fully incorporated.  Serve in a wrap ( I use Joseph's Lavish Bread) with Avocado slices.  Enjoy  :)
