Frosted Peanut Butter Cup Cookies






     When Quest Nutrition came out with Peanut Butter Cups, I was one happy girl.  I had to add a little to die for Frosting, you might even call it the Cherry on top.  Each of the 4 Cookies are 182 calories, 15.2 carbs, 3g fiber, 9.5g sugar alcohol, 2.7g net carbs, 4.5g protein and 15.9g fat.  These literally melt in your mouth...not in your hands...(had to say it).

Ingredients for 4 Cookies~
1 Tablespoon Butter, softened to room temperature
2 Tablespoons plus 1 teaspoon Almond Flour
2 Tablespoons Lakanto Peanut Butter Powder~use code Paige20 at checkout for discount
1 Tablespoon Lakanto Golden Monk Fruit~use code Paige20 at checkout for discount (sub with Regular, and use an extra teaspoon for rolling in dough, optional and not included in macros)
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla

1 Tablespoon Butter, softened to room temperature
2 Tablespoons/1oz Cream Cheese, softened to room temperature
1 Tablespoon Lakanto Confectioners Monk Fruit~use code Paige20 at checkout for discount

     Mix first set of ingredients, reserve teaspoon of Golden Monk Fruit.  Divide dough into 4 equal pieces, should weigh in at 17-18 grams, roll into balls and roll in extra Monk Fruit, press each ball of dough in silicone lined muffin tin, and slightly press up the sides.  Bake at 350 for 8-10 minutes, or til golden brown, remove from oven and gently set Peanut Butter Cup in center and slightly press down (do not remove Cookie from muffin liner til chilled and set).  Put in fridge to chill.  Meanwhile, mix last set of ingredients til smooth, should yield 1/4 cup, frost each with 1 Tablespoon Frosting.  Enjoy  :)
