Skillet Pizookie for Two






     Are you a giver, a sharer, a lover!?  If so, I have the perfect dessert in store for you.  Besides, isn't life even sweeter when it's shared!?  That answer would be a big fat YES!  That being said, my Skillet Pizookie for Two is the perfect way to show affection to "your person".  Don't wait for a special occasion, make every day special with this treat.  And, with these awesome stats, these can easily work into your daily macros.  Each of the two servings are only 277 calories, 17g net carbs, 18g protein and 13g fat.  Nothing says love like a cookie in a cast iron skillet!

Ingredients for 2 servings~
1 Tablespoon Coconut Oil, melted
1/4 cup Cassava Flour (sub with Flour of choice)
2 scoops unflavored Vital Proteins Collagen Peptides
1 Extra Large Egg, room temperature

1 teaspoon Baking Powder
Dash Lite Salt
Dash Cinnamon
Dash Vanilla
1 Tablespoon Lily's Stevia Sweetend Dark Chocolate Chips

1/2 cup scoop Kroger Low Cow Ice Cream (sub with favorite low calorie Ice Cream)
1 Tablespoon Peanut Butter Powder, reconstituted with Water to desired consistency
1/4 teaspoon Sprinkles

     Add first set of ingredients except Chips to mixing bowl and beat til well incorporated.  Stir in half of Chocolate Chips, pour into greased mini cast iron skillet, and sprinkle remaining chips on top.  Bake at 375 for 10-12 minutes.  Remove from oven, top with 1/2 cup scoop of Ice Cream, add Peanut Butter to baggie, snip corner and drizzle on top, garnish with Sprinkles.  Enjoy  :)

High Fiber Banana Bread







     If you are looking for a hearty High Fiber Banana Bread, I think I have created a winner.  My sassy friend, Laura, requested a healthy low carb version, and this did not disappoint, (if the carbs are still too high then sub Almond Flour for the Oat Flour).  This makes 2 loaves, a 1/4 of each loaf it is 249 calories, 16g net carbs, 5.2g fiber, 12g protein and 13g fat.  Breakfast is just waiting for you to get started...

Ingredients for 8 servings~
1 medium ripe (about 4.5oz) Banana
15oz can White Beans, drained
1 cup Oats, grind to powder in blender
1/4 cup Coconut Oil, melted
1/2 cup/4oz unsweetened Applesauce
1/4 cup ground Flaxseed
2 Extra Large Eggs, room temperature
4 scoops unflavored Vital Proteins Collagen Peptides
1/2 cup Lakanto Golden Monk Fruit~use code Paige20 at checkout (sub with sweetener of choice)
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla

1/4 cup chopped Walnuts

     Add Banana and Beans to food processor or blender, blend to smooth consistency.  Add remaining first set of ingredients and mix til well incorporated.  Line two loaf pans with parchment paper, divide the 3 1/2 cups batter by adding 1 3/4 cups batter to each loaf.  Sprinkle 2 Tablespoons Walnuts on each loaf of bread, bake each loaf at 350 for 30-35 minutes.  Enjoy  :)

Chocolate Chip Cookie Pie









     Are you looking for that perfect dessert that supersedes all others.  Well how would you feel about sinking your teeth into my Chocolate Chip Cookie Pie!?  And what would you think about each serving being 189 calories, 8g net carbs, 10g protein and 12g fat, (macros are for pie only).  Then adorn to your fancy!  Whether you are celebrating a birthday, holiday or Tuesday, this is one that will not disappoint!

Ingredients for 8 slices of pie~
1/4 cup/4 Tablespoons Butter, softened to room temperature
3/4 cup Lakanto Golden Monk Fruit~use code Paige20 at checkout
2 Extra Large Eggs, room temperature
1 cup Oats, ground to powder
1/2 cup super fine Almond Flour
4 scoops unflavored Vital Proteins Collagen Peptides
1 teaspoon Baking Powder
1 teaspoon Lite Salt
Dash Cinnamon
Dash Vanilla

2 Tablespoons Choczero Chocolate Syrup
2 Tablespoons Lily's Stevia Sweetened Dark Chocolate Chips

1 scoop low calorie Ice Cream, if desired~ I used Kroger Low Cow Birthday Cake
ChocZero Chocolate Syrup, for drizzling if desired
Sprinkles, as garnish if desired

     Add Butter and Monk Fruit to bowl and mix with beaters til well combined, add in Eggs and continue to beat, add remaining set of first ingredients til well incorporated.  Line a shallow pie pan with parchment paper, spread half the dough in bottom, drizzle with 2 Tablespoons ChocZero Chocolate Syrup and spread remaining dough on top, sprinkle with Chocolate Chips and bake at 375 for 25-30 minutes, depending on if you like you cookies more on the gooey side or cake like.  When cool, slice and add optional toppings.  Enjoy  :)

Neck Tie Sugar Cookies




     Looking for a fun way to celebrate that special man in your life!?  What could be more charming than cookies shaped as neck ware.  Dad will be swooning over the gesture.  And since we love our padre' we want to keep him healthy.  Keep a smile on his face with these stats, each colorful tie is only 137 calories, 4g net carbs, 7g protein, and 6g fat (1 cookie plus 1 Tablespoon frosting).  Decorate as desired by matching his favorite tie, or simply write your favorite message of affection.  Happy Father's Day to all those great dads out there!

     Mix first set of ingredients til thoroughly incorporated, chill in fridge for 2 hours.  Remove and break into 2 Tablespoons of dough, spray cookie cutter insides with cooking spray, set on silpat lined cookie sheet and press the 2 Tablespoon of dough on inside, gently remove cookie cutter.  Repeat 7 more times with remaining dough.  Dough should yield 1 cup.  Bake at 350 for 10 minutes.  Meanwhile, mix second set of ingredients til well incorporated, chill in fridge while cookies cool completely.  When cooled use 1 Tablespoon Frosting to decorate as desired.  Enjoy  :)

Chickpea Chicken Pasta






     Are you looking for grain free pasta options, well how about looking at Explore Cuisine Organic Chickpea Spaghetti!?  I have created a fun new simple twist on dinner, so you will have to give my Chickpea Chicken Pasta a try.  Each of these four hearty servings are only 438 calories, 36g net carbs, 37g protein and 13g fat.  This pulls together quickly, but you would never know it by the taste!  Serve it over a bed of Greens for even more fiber and volume.  Happy eating!  :)

Ingredients for 4 servings~
Olive Oil Cooking Spray
1 pound Chicken Breast, diced
1 Tablespoon chopped Garlic
Dash Salt
Dash Pepper
Dash Cayenne Pepper
Edible portion of Asparagus bundle, approx 5oz, diced
8oz Explore Cuisine Organic Chickpea Spaghetti
1/4 cup prepared Pesto
1 pound Cherry Tomatoes, diced
1/4 cup Parmesan Cheese, grated

     Spray skillet with Cooking Spray, add Chicken, Garlic, Salt, Pepper and Cayenne, and lightly coat with Cooking Spray.  Meanwhile, cook Spaghetti per directions.  As Chicken starts to cook, add diced Asparagus til crisp tender, remove from heat, drain liquid, stir in Pesto and Tomatoes.  Pour over cooked Spaghetti and top with Parmesan.  Enjoy  :)

Turkey Bacon Meatballs






     If you are going "high protien low carb" and looking for ideas, I have another one to add to your list. Turkey Bacon Meatballs is one to try, each of the 4 servings are only 265 calories, 1g net carbs, 30g protein and 16g fat.  Add to a plate of mixed greens with your favorite Ranch Dressing, or make your own dipping sauce like I did.  Either way, check out these super filling meatballs for lunch or dinner, you will be glad you did!

Ingredients for 4~5 1/2oz servings~
8 slices cooked Turkey Bacon, crumbled
93% lean ground Turkey
1/4 cup grated Sharp Cheddar
1 jumbo Egg, beaten with a fork
1/4 cup diced Green Onions
1 Tablespoon chopped Garlic
Dash Lite Salt
Dash Cayenne Pepper
Dash Pepper

Bunch of Cilantro, chopped
Jalapeno, seeded and chopped
1/4 cup Red Onion, chopped
1/2 cup light Mayo
2 Tablespoon White Vinegar
1 Tablespoon Spicy Mustard
2 Tablespoons Olive Oil
1 Tablespoon chopped Garlic
Dash Salt
Dash Pepper

     Mix together first set of ingredients in bowl, separate into four equal portions, should be about 5 1/2oz or a scant 3/4 cup.  Divide each portion into 3 equal meatballs and rest on foil lined cake pan, bake at 375 for 30 minutes.  Meanwhile, combine second set of ingredients in food processor til well combined and use as dipping sauce, all of these measurements are approximations, I did not accurately measure, and you can adjust according to your taste, nor do I have macro nutrient info.  Enjoy  :)


Coconut Flour Butter Cookies






     Shout out to all my keto lovin' followers, I am going to be your new best friend!  Would you believe me if I told you these wonders were only one net carb!?  Shocking, right!?  In fact, each of these melt in your mouth Coconut Flour Butter Cookies are only 73 calories, 4g protein and 5.5g fat.  Not bad, huh!?  These turned out amazing and I am immensely proud!

Ingredients for 16 cookies~
1/4 cup/4 Tablespoon Butter, softened to room temperature
1 jumbo Egg, room temperature
2 scoops unflavored Vital Protein Collagen Peptides
1/4 cup Almond Flour
1/4 cup Coconut Flour

Sugar Cookies







     Sugar Cookies are an all american favorite.  So what if you could have all the flavor and still stick to your goals!?  Whelp, I've got ideas and I want to share them with you!  Each of the 16 cookies are only 64 calories, 2g net carbs, 3g protein and 5g fat.  These were the perfect afternoon snack...who am I kidding, I snuck them all day long... And ironically, they get softer by the day!...not that they lasted many days!  Check out my recipe and see how I do things!

Ingredients for 16 cookies~
3 Tablespoons melted Coconut Oil

Fathers Day Cupcakes
