Spinach Artichoke Pizza

     Garden Lites has a product that really has me thinkin'.  Since I love Spinach Artichoke Dip, why not turn my fancy into a pizza topper.  Why indeed.  To make life easy, I used Garden Lites Spinach Bake to whip dinner together in a flash.  If you are like me and keep Cauliflower Pizza Crusts on hand in the freezer, this pulls together as soon as hunger strikes!  Hot tip...keep a few of these in the freezer at all times, so easy to make into a meal, search my blog for many ideas.  Try for a few meatless meals in the week, and put this one at the top of the list!

Cauliflower Pizza Crust~
7oz Garden Lites Spinach Bake~cooked to
Jar of drained and chopped Artichoke Hearts
Shredded Parmesan, Mozzarella, Swiss or Cheddar~desired amount
Diced Tomatoes

     Prepare Cauliflower Crust, bake as instructed.  Cook Spinach Bake according to directions and mix with diced Artichoke Hearts, spread on top of crust.  Sprinkle with Cheese and bake at 425 for 10 minutes, or til heated thru and Cheese melted.  Remove and garnish with diced Tomato.  Enjoy  :)
