Peach Cobbler








     Is there anything better than a fresh ripe Colorado Peach!? When you bite into its sweet flesh it creates so much juice it has no choice but to dribbles down your arm!  #peachheaven    Luckily, I'm smart enough to take advantage of peach season when it's upon me, and a Cobbler is a MUST!!!  This turned out simply AMAZING!!!  Even better news, each of the six servings is only 209 calories, 13g net carbs and 13.1g protein.  Now go get your Cobbler on before it's too late!!!  ;)

Ingredients for 6 servings~
4 large ripe Colorado Peaches, diced
1 scoop Quest Vanilla Milkshake Protein Powder
Dash Cinnamon
Dash Vanilla
- - - - - - - - - - - - -
1/4 cup Coconut Oil, melted
1 jumbo Egg
1 cup 25 cal/cup Cashew Milk
1/3 cup Coconut Flour
1 scoop Quest Vanilla Milkshake Protein Powder
1 teaspoon Baking Powder
1/2 teaspoon Salt
Dash Cinnamon
Dash Vanilla
- - - - - - - - - - - - - -
Low Carb Ice Cream, 1/2 cup per serving~optional, feel free to leave out~not included in macros, I leave it off, optional to pour on some Almond Milk

     Diced all 4 Colorado Peaches(I keep the skins on, but your choice) and stir with 1 scoop Quest Vanilla Milkshake Protein Powder, Dash Cinnamon and Vanilla.  Pour into Pam sprayed dish, set aside.  Meanwhile with second set of ingredients, stir together melted Coconut Oil, Egg, Cashew Milk, Coconut Flour, 1 scoop Quest Vanilla Milkshake Protein Powder, Baking Powder, Salt, Cinnamon and Vanilla til well blended, then pour on top of peach mixture and bake at 350 for 45 minutes.  Serve and top each serving with 1/2 cup Low Carb Ice Cream if desired, otherwise leave off.  Enjoy  :)

Cream Cheese Frosted Blueberry Lemon Zucchini Cupcakes







     All I can say is "WOW"!  Cream Cheese Frosted Lemon Zucchini Cupcakes are filled with natural ingredients that will brings a sense of granola tree hugging yuppiness into your life!  Once you get over yourself, you will be able to bask in the glory that each of these 12 hearty cupcakes are only 126.5 calories, 6g net carbs and 10g protein.  This one may take a little more effort, but after all, isn't the power of good greater than the power of easy!?  You can literally feel health growing inside you with each and every bite.  #peaceout ...I'm off to Yoga  ;)

Ingredients for 12 Frosted Cupcakes~
Zest from one Lemon, set aside
1/4 cup Vanilla Cupcake Sweet Spreads, melted
1 jumbo Egg
7oz 2% Fage Greek Yogurt, divided in half
2 Tablespoons fresh squeezed Lemon Juice
8oz Zucchini, grated and shred into dish towel, squeeze excess moisture by pressing towel
1/3 cup Swerve Granular Erythritol
1/4 cup Nutiva Coconut Flour
1 scoop Quest Vanilla Milkshake Protein Powder
1 teaspoon Baking Powder
1/2 teaspoon Salt
Dash Cinnamon
Dash Vanilla
1 Quest Lemon Cream Pie Protein Bar, diced into bits
1/2 cup fresh Bluberries
8oz fat free Cream Cheese
1/2 cup Swerve Confectioners Erythritol
Dash Lemon Extract

     Zest lemon, set aside to use for garnish.  Stir melted Vanilla Cupcake Sweet Spreads with Egg, half of Fage Yogurt, fresh Lemon Juice, grated Zucchini with moisture removed, Granular Erythritol, Coconut Flour, Quest Vanilla Milkshake Protein Powder, Baking Powder, Salt, Cinnamon, and Vanilla.  Gently fold in Quest Lemon Cream Pie bits and Blueberries, and add to Silpat lined 12 cupcake tin.  Bake at 350 for 28 minutes.  Meanwhile, melt fat free Cream Cheese in microwave, and stir in other half of Fage Yogurt, Swerve Confectioners Erythritol and dash of Lemon Extract til smooth, chill in fridge til set and ready to frost.  After Cupcakes have cooled, frost with thickened Cream Cheese Frosting, and garnish with Lemon Zest.  Enjoy  ;)

Whipped Topping for garnish, if desired (macros don't include Whipped Topping garnish)

     Stir melted White Chocolate Sweet Spreads with Egg, Yogurt, Erythritol, Coconut Flour, Baking Powder, Salt, Cinnamon, and Vanilla.  Pour into parchment lined or Pam sprayed 8X8 pan, top with Raspberries, chopped Quest White Chocolate Raspberry Bar bits, and sprinkle with Lily's Chocolate Chips.  Bake at 350 for 38 minutes.  Cool and Enjoy  ;)

Chocolate Chunk Zucchini Carrot Bread







     You can't judge a book by its cover!  This Chocolate Chunk Zucchini Carrot Bread may not be the Queen of the Prom but I guarantee this beauty will live happily ever after in the world of yumminess!  Even better is the award winning stats that each of the 8 slices are only 131 calories, 5g net carbs and 10g protein.  You don't have to be a Rhodes Scholar to do the math on this one!  ;)

Ingredients for 8 slices~
10oz grated Zucchini, grated into hand towel and squeeze excess liquid til moisture removed
2 Tablespoon Coconut Oil, melted
1 Jumbo Egg
1 cup 25 cal/cup Cashew Milk
1 scoop Quest Salted Caramel Protein Powder or Vanilla Milkshake Protein Powder
6oz shredded Carrots
1/3 cup Coconut Flour
1/3 cup Swerve Granular Erythritol
1 teaspoon Baking Powder
1/2 teaspoon Salt
Dash Cinnamon
Dash Vanilla
1 Quest Double Chocolate Chunk or Banana Nut Muffin, chopped into bits
1 Tablespoon chopped Walnuts
1 Tablespoon Pumpkin Seeds

     After squeezing all the excess moisture out of the shredded Zucchini, add to melted Coocnut Oil, Egg, Cashew Milk, Protein Powder, shredded Carrots, Coconut Flour, Erythritol, Baking Powder, Salt, Cinnamon and Vanilla, then pour into parchment lined loaf pan.  Top with diced Quest Bar, Walnuts and Pumpkin Seeds.  Bake at 375 for 50 minutes.  Remove and cool til ready to slice!  Enjoy  ;)

Cookie Dough Chocolate Chip Brownies







     I want Cookie Dough Chocolate Chip Brownies and I want them NOW!!!  ... can you blame me!?  And since each of the 9 Brownies are only 125 calories, 4g net carbs and 11g protein there is no reason you shouldn't have them NOW too!  These may seriously be the best Brownies I have ever made, I'm even impressed with myself...! :0  There is no time like the present, Cookie Dough Chocolate Chip Brownies are a life priority .. as it should be... if you want to live happily ever after that is!!!  ;)

Ingredients for 9 servings~
1/2 cup Brownie Batter G Butter
1 Jumbo Egg
1 cup 25 cal/cup Silk Cashew Milk
1 scoop Quest Chocolate Milkshake Protein Powder
1/4 cup Cacao or Cooca Powder
1/4 cup Nutiva Coconut Flour
1/4 cup Swerve Granular Erythritol
1 teaspoon Baking Powder
1/2 teaspoon Salt
Dash Cinnamon
Dash Vanilla
1 Quest Cookie Dough Protein Bar, diced
1 Tablespoon Lily's Stevia Sweetened Dark Chocolate Chips

     Stir together Brownie Batter, Egg, Cashew Milk,  Quest Chocolate Milkshake Protein Powder,  Cocoa Powder, Coconut Flour, Granular Erythritol, Baking Powder, Salt, Cinnamon and Vanilla, then pour into parchment lined 8X8 pan, top with diced Quest Cookie Dough bits, and bake at 350 for 27 minutes.  Remove and sprinkle with Lily's Chocolate Chips, cool, cut and Enjoy  ;)

Spicy Pumpkin Peach and Goat Cheese Salad







     This salad though... Spicy Pumpkin Peach and Goat Cheese Salad!!!  I. Can't. Even.  This has the perfect amount of everything all rolled into one plate of goodness.  Take advantage of sweet juicy succulent peaches while they are in season (big key for a super salad), and what ever you do don't pick the hard colorless ones...we ain't go no time for dat!  Whole Foods has excellent Colorado Peaches that melt in your mouth!  Add these beauties to your grocery list and prepare for a new experience of flavors in this amazing Salad!  I've literally had this the past two days for lunch, ... and can't wait for tomorrow...  :)  PS  Macros for one Salad is 241 calories, 19.7g net carbs, and 10g protein.  If you want to add more protein then add 2oz of Grilled Salmon or Chicken.

Ingredients for one Serving~
1 head Romaine, torn into bite size pieces
1 ripe Peach, diced into bite size pieces
1oz crumbled Goat Cheese ( I love the Whole Foods brand)
1 Tablespoon Spicy gourmet roasted Pumpkin SuperSeedz
1 Tablespoon BRIANNAS Blush Wine Vinaigrette
Dash Pepper

     Lay torn Romaine on dinner plate, top with diced Peach, crumbled Goat Cheese, Pumpkin Seedz, BRIANNAS Blush Wine and finish with dash Pepper.  If you want more protein, add more Cheese or Pumpkin Seedz.  Enjoy  :)

Barbeque Chicken Corn and Bacon Goat Cheese Zucchini Pizza







     Now you can have your pizza and eat it too!!! Barbeque Chicken Corn and Bacon Goat Cheese Zucchini Pizza...say that three times...actually I loved all the ingredients so much I couldn't bare to leave anything out of the title!  And you will have equal admiration when I tell you that each of the 8 slices are only 189 calories, 11g net carbs and 21g protein.  However, if you have your own idea of how to top a pizza, feel free to just use my Zucchini crust and create your own party!  Macros for each of the 8 slices of Zucchini Crust only is 77.8 calories, 2.4g net carbs and 11.6g protein.  Ciao  ;)

Ingredients for 8 slices of Zucchini Crust~
11oz or One large Zucchini, shredded and drained in towel for several hours
1 bag Quest Sour Cream and Cheddar Potato Chips, crushed to crumbs
1 scoop Quest Multi Purpose Baking Protein Powder
1/4 cup Nutiva Coconut Flour
1/2 cup Shredded Parmesan
1 teaspoon Salt
Dash Garlic Powder
Dash Onion Powder
Dash Cayenne Powder
2/3 cup Egg Whites

     Shred Zucchini and let rest in cheese cloth or hand towel for several hours, when ready to make crust, remove extra liquid by wrapping towel tightly and squeezing liquid from Zucchini over kitchen sink.  Add to bowl along with all other ingredients and mix together til dough forms.  Spray Pizza pan with Pam and pat out dough to edges, turning up edge slightly.  Bake at 375 for 32 minutes or til just begins to slightly brown.  Remove and add desired toppings.

Ingredients for Barbeque Chicken Corn and Bacon Goat Cheese Zucchini Pizza~
1/4 cup Barbeque Sauce
1/2 cup Grilled Chicken, diced into bite size pieces
4 slices cooked and crumbled Turkey Bacon
4oz crumbled Goat Cheese
1 Corn on the Cob, cooked and cut from cob
Red Bell Pepper, sliced
Green Bell Pepper, sliced
1 Roma Tomato, diced and drained on paper towel several hours as possible
1-2 slices Red Onion
Cilantro Leaves, for garnish if desired

     Spread Barbeque Sauce on cooked Zucchini Crust, top with Chicken, Bacon, Goat Cheese, Corn, Bell Peppers, Tomato, and Onion.  Place back in oven at 375 for 12 minutes or til cheese melted and veggies crisp tender.  Remove and garnish with Cilantro Leaves.  Enjoy  :)

Chocolate Peanut Butter Mousse Stuffed Brownies








     What do you do when you turn 52, make Chocolate Peanut Butter Mousse Stuffed Brownies of course...then celebrate without remorse! ...clearly, you don't want to look like a horse!  Be a smarty, you won't want to be tardy to the party when you find out that each of the 9 Brownies are only 117 calories, 6g net carbs and 10g protein.  It's my birthday, serve me dessert on a silver tray without delay!  :)

Ingredients for 9 Brownies~
1 Tablespoon Betterbody Foods Coconut Oil
1 Jumbo Egg
1 scoop Quest Chocolate Milkshake Protein Powder
1 cup 25 cal/cup Silk Cashew Milk
7oz 2% Fage Greek Yogurt~ divided in half
1/2 cup Cacao or Cocoa Powder
1/4 cup Betterbody Foods Coconut Flour
1/4 cup Swerve Granular Erythritol
1 teaspoon Baking Powder
1/2 teaspoon Salt
Dash Cinnamon
Dash Betterbody Foods Vanilla
1 Tablespoon Cashew Butter, or any Nut Butter
2 Tablespoons Lily's Stevia Sweetened Dark Chocolate Chips~divide in half
1/3 cup Betterbody Foods Chocolate Peanut Butter Powder, divided by 1/4 cup and 2 Tablespoons
2 Tablespoons Fat Free Half&Half
1 Tablespoon Swerve Confectioners Erythritol

     Melt Coconut Oil in microwave for 15 seconds and stir in Egg, Chocolate Milkshake Protein Powder, Cashew Milk, 1/2 of Fage Yogurt, 1/2 cup Cacao or Cocoa Powder, Coconut Flour, Granular Swerve, Baking Powder, Salt, Cinnamon and Vanilla.  Pour into parchment lined 8X8 pan and bake at 350 for 28 minutes.  Remove and cool, meanwhile microwave and stir Cashew Butter/Nut Butter and 1 Tablespoon Lily's Chocolate Chips til well incorporated, then add in other half of Yogurt and 2 of the Tablespoons of Chocolate Peanut Butter Powder til smooth, chill in fridge, set aside.  When Brownies are cooled, slice horizontally and spread Mousse mixture on one half and top with other half, chill.  Then, stir together last 1/4 cup Chocolate Peanut Butter Powder, 2 Tablespoons Fat Free Half&Half, and Tablespoon Confectioners Swerve til smooth, add to ziplock baggie, snip off corner and drizzle on Brownies, finish by sprinkling last Tablespoon of Lily's Chips on top.  Cut into 9 servings and Enjoy  :)

Bacon Chicken Caesar Salad Wrap






     Time to Wrap it up!  What better way to celebrate lunch than with this Bacon Chicken Caesar Salad Wrap!  All the taste of comfort food yet the macros of health food.  Each Wrap is only 210 calories, 6.7g net carbs and 30.3g protein.  Add a bag of Quest Chips for only another 120 calories, 5g net carbs and another 21g protein.  You do the math on that powerhouse and you will see that's over FIFTY grams protein, ...I think you will know where your next meal is coming from!  ;)

Ingredients for 4 Wraps~
1/3 cup BRIANNAS Asiago Caesar Dressing
1 pound boneless skinless Chicken Breast
4 Low Carb La Tortilla Factory White Flour Shells
4 Tablespoons shredded Parmesan
4 slices cooked Turkey Bacon
1/2 Red Bell Peppers, sliced
4 leafs Romaine

     Marinate Chicken Breast over night or for several hours with BRIANNAS in ziplock bag, drain marinade and grill Chicken, remove and slice into thin slices, lay 4oz warm Chicken on each Low Carb Tortilla, top each with a Tablespoon Parmesan, then cooked Bacon slice, next Bell Pepper slices, and finish with Romaine.  Wrap it up and Enjoy  ;)

Apple Stuffed Apple Pie Cookies







     What is more American than a Apple Stuffed Apple Pie Cookie!?  Nuthin', that's what!  Each of these four hummdingers are only 84.7 calories, 3.6g net carbs and 5.4g protein.  Doesn't it just make you want to plan a picnic around these babies while eating off a red checkered table cloth belting out the Star Spangled Banner!

Ingredients for Four Cookies~
1 Quest Apple Pie Protein Bar, divided into 4 equal parts
1/2oz Fuji Apple, divided into 4 equal parts
1 Tablespoon Cinnamon Roll Sweet Spreads Coconutter
1 Tablespoon Bob's Red Mill Dried Diced Apple

     Microwave Apple Pie Quest Bar that has been divided into 4 equal parts for 15 seconds.  Divide Fuji Apple in 4 equal parts, soften each Quest Bar pieces and place a Apple in the center and wrap dough around the Apple and place seam sides down on Silpat lined cookie sheet, repeat with remaining ingredients.  Bake at 350 for 7 minutes, cool slightly and spread each cookie with 1/4 Tablespoon Sweet Spreads and top each with 1/4 Tablespoon Dried Diced Apples.  Enjoy  ;)
