Caesar Salmon Brussels Kale Salad







     If you want all things healthy in your mouth with each and every bite without compromise, then might I suggest my Caesar Salmon Brussels Kale Salad.  You can literally feel yourself  growing in "uppityness" thinking you are better than everybody else thru your clean eating!  To add to that self esteem high, know that each of the six servings are only 432 calories, 17.4g net carbs and 37.7g protein for this GIANT bowl of goodness!  Start planning a dinner party with 5 of your friends (if you still have friends thru your smugness) and share the "health wealth"!  ;)

Ingredients for 6 servings~
1.5 pounds Salmon
24oz Brussels Sprouts (after cleaned the residual weight is 18.5oz, macros based on cleaned weight)
6oz de-stemmed Kale Leaves
1/3 cup BRIANNAS Asiago Caesar Dressing (sub with favorite)
1 Red Bell Pepper, diced
15oz can drained Garbanzo Beans
3 slices cooked and crumbled Turkey Bacon
1/3 cup shredded Parmesan
1/3 cup Tomato Italiano gourmet roasted Pumpkin SuperSeedz (sub with regular Pumpkin Seeds)
1 slice Red Onion, halved
Dash Pepper

     Grill or bake Salmon as desired.  Meanwhile, clean, trim and halve Brussels Sprouts and drop in food processor to grind to slaw, pour in large mixing bowl.  Tear Kale Leaves into bite size pieces and add to mixing bowl along with BRIANNAS Asiago Caesar Dressing, toss to mix and coat.  Add diced Red Bell Pepper to perimeter of the bowl, followed by Garbanzo Beans on inside circle of  Red Bell Peppers, then sprinkle with Bacon bits.  Layer Salmon thru middle of Salad, top with Parmesan, Pumpkin Seeds, Red Onion halves and Pepper.  Enjoy  :)
