Strawberry Cream Cheese Cake








     If you love Strawberries, and you love Cream Cheese and you love Cake, I can't think of one good reason you wouldn't love Strawberry Cream Cheese Cake!  To add to your affections, each of the nine hearty pieces are only 148 calories, 10.7g net carbs and 15.8g protein.  Now you can have your Cake and eat it too!  :)

Ingredients for 9 pieces~
8oz Fat Free Cream Cheese, melted
7oz 2% Fage Greek Yogurt
1 cup Swerve Confectioners Erythritol
1 Tablespoon Vanilla Cupcake Sweet Spreads Coconutter, melted
1 Jumbo Egg
5.3oz Dannon Light&Fit Strawberry Yogurt
1/4 cup Nutiva Coconut Flour
1/4 cup Swerve Granular Erythritol
4oz baked, cooled and skinned Sweet Potato
1 cup diced fresh Strawberries
1 scoop Quest Strawberry or Vanilla Milkshake Protein Powder
4oz fat free Cream Cheese, diced
1 Quest Strawberry Cheesecake Protein Bar, chopped in bits
1 teaspoon Baking Powder
1/2 teaspoon Salt
Dash Cinnamon
Dash Vanilla
9 small Strawberries for garnish, if desired

     Melt 8oz fat free Cream Cheese in microwave, stir til smooth, then stir in Fage Yogurt and Confectioners Erythritol til well combined, chill in fridge til set.  Meanwhile, melt Sweet Spreads in microwave for 15 seconds, then stir in Egg, Strawberry Yogurt, Coconut Flour, Granular Erythritol, Sweet Potato, Strawberries, Protein Powder, diced Cream Cheese, Protein Bar bits, Baking Powder, Salt, Cinnamon and Vanilla.  Pour into Parchment lined 8X8 pan and bake at 350 for 35 minutes.  Remove and cool, then lift from pan by holding onto edges of Parchment Paper, set on slicing board and slice in half horizontally, frost bottom half with half the chilled frosting, add top layer of cake and frost top half with remainder.  Garnish with 9 small Strawberries on top of each piece if desired.  Serve and Enjoy  :)
