Instructions~

Add a layer of fresh cantaloupe to a bowl or glass container.

Add a layer of Greek yogurt on top of the cantaloupe.  Garnish with Cinnamon if desired.  Sprinkle with chopped walnuts.  Enjoy immediately, or cover and refrigerate until ready to eat.

Instead of reaching for a highly processed protein bar or snack, these Apple Protein Oat Bites combine simple ingredients: ground oats, eggs, protein powder, and a crisp apple.  These little bites are packed with protein, fiber, and quality carbohydrates to help replenish energy after training. They are easy to meal prep, easy to grab on the way out the door, and made with ingredients you can recognize.

Whether you enjoy them after a workout, as a quick breakfast, or a snack when you need something satisfying, this recipe proves that real food can be simple.


Apple Protein Oat Bites


Ingredients~

1 cup Oats~(¾ cup ground oat flour)

1 scoop plain protein powder (only one ingredient of Whey Protein)

1 Teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

3 large eggs

5 ounce finely chopped Cosmic Crisp Apple (sub with favorite Apple, …but Cosmic Crisps are the Apple of my eye #seewhatIdidthere)


Instructions~

Preheat oven to 350°F.

In a bowl, combine the ground oats, protein powder, baking powder, vanilla and eggs.  Stir until well combined.  Allow the batter to rest for 10–15 minutes, or longer if wish.  This gives the oats and protein powder time to absorb the moisture and helps create a better texture. Divide the batter (about an 1/4c each) evenly into 6 muffin cups or silicone muffin liners.  Sprinkle the chopped apple pieces over the top of each portion, gently pressing them slightly into the batter. Garnish with extra Cinnamon if desired.  Bake for 25-27 minutes (protein powder baking will continue to firm up after baking), or until the centers are set and a toothpick inserted comes out mostly clean.


Allow to cool before storing. These can be enjoyed immediately or stored for an easy grab-and-go snack.

Roasted Kabocha Squash



Roasted Kabocha Squash: Simple, Nourishing, and Naturally Sweet


🍂 There’s something quietly miraculous about kabocha squash. It’s the kind of vegetable that feels like a treat, rich, sweet, and velvety, yet it asks almost nothing of you. No oil, no seasoning, no fuss. Just slice, deseed, and roast. The result is a dish so flavorful it tastes like it’s been lovingly prepared for hours, when in truth, it’s nature doing the work.  Another fun fact is it feels like Fall, but perfect all year round.  Basically a must try for your regular rotation ;)


🥄 Ingredients~

• 1 medium kabocha squash, washed

That’s it. Truly.


🔪 Instructions~

1 Preheat your oven to 400°F.

2 Cut the squash in half and scoop out the seeds, they’re beautiful but not part of the roast. (Tip:  Microwave for 2-3 if skin is too tough to slice)

3 Lay face down on parchment lined cookie sheet, roast for 20-30 minutes. The edges should deepen in color, and the flesh should be soft but not mushy.

      4  After roasting, cool enough to where you can slice each half into wedges or cubes.  If over roasting occurs, let it chill to firm up before slicing.  PS Always leave the skin on; it becomes tender and delicious, and full of nutrients.

Tip: Over-roasting can turn the texture pasty. The magic happens right before that point, when the squash is custardy and sweet.  Lastly, most grocery stores carry Kaboch in the Fall, but you can generally find it in your Asian Markets year round, sometimes called Japanese Pumpkin.
