1 yellow squash, diced
1 zucchini, diced
1 yellow bell pepper, diced
8 ounces fresh mushrooms, sliced
Parmesan cheese, to taste
Sun-dried tomatoes, to taste
Salt and pepper, to taste (optional)
Instructions~
Heat the olive oil in a large skillet over medium heat.
Add the onion, carrots, garlic, and cayenne pepper. Sauté until the onions become soft and lightly golden.
Stir in the yellow squash, zucchini, yellow bell pepper, and mushrooms. Cook until the vegetables are softened but still crisp-tender.
Remove from the heat and top with your desired amount of Parmesan cheese and sun-dried tomatoes.
Season with salt and pepper, if desired, and serve immediately.
