Cookie Dough Easter Eggs







     You have to know, these unbelievable Cookie Dough Easter Eggs are too good to only be eaten once a year!  The Easter Bunny would be sad if you didn't enjoy these all year round!  And wait til you find out each Egg is only 67 calories, 1.7g net carbs and 7g protein.  With numbers like that, the Tooth Fairy will approve as well!  :0

Ingredients for 4 Eggs~
1 Quest Cookie Dough Protein Bar, divided into 4 equal pieces
1 Tablespoon Lily's Stevia Sweetened Dark Chocolate Chips
2 Tablespoons 35 cal/cup So Delicious Cashew Milk
1/4 scoop Quest Salted Caramel Protein Powder
Food Coloring, desired colors

     Microwave Quest Bar pieces for 10 seconds to soften, shape into Egg Shape and sit on cooling rack with plate underneath.  Put Chocolate Chips and 1 Tablespoon in bowl and microwave for 20 seconds, stir til thoroughly blended and pour over Eggs til completely covered.  (The cook gets to lick up the extra chocolate drippings that fall on the plate)  Stir together Protein Powder and remaining Tablespoon Cashew Milk, add desired food coloring and snip corner of baggie, fill with colored frosting and decorate as desired!  Don't hide these Eggs, just eat them as soon as possible!  Enjoy  :)

Lemon Cream Pie






     You know that creamy lemony flavor that melts in your mouth with every bite, ... I sure do!  And I wanted about 8 pieces of it!  Each piece being only 102 calories, 9.5g net carbs and 6g protein, ...in fact with macros like that, I think TWO pieces are in order! ...more would just be wrong ...but if this is wrong I don't want to be right!  :)

Ingredients for 8 pieces of pie~
3/4 cup All Bran Cereal
1 Tablespoon Coconut Oil, melted
1 Tablespoon Lakanto Monk Fruit~use code Paige20 at checkout for discount
Small box sugar free Lemon Jello (.30oz)
1 cup boiling Water
Zest and Juice of one small Lemon
2 Tablespoons/1oz Cream Cheese, softened
1 scoop Quest Salted Caramel Protein Powder
100 calorie Yoplait Greek Lemon Yogurt
1 teaspoon Lemon Extract
1 cup Light Whipped Cream/Cool Whip
6oz fresh Raspberries, for garnish if desired (not included in macros)

     Grind cereal in Magic Bullet til powdered, pour into greased pie plate.  Add Coconut Oil and Monk Fruit to crumbs, mix til fully incorporated and press on bottom and half way up sides of dish, set in freezer while making filling.  Bring water to boil, remove from heat and stir in jello til dissolved, set in fridge to cool.  Meanwhile, zest lemon and set lemon curls to side and squeeze juice from lemon.  Stir Lemon Juice into softened Cream Cheese, then add in Protein Powder, and then add in Yogurt and Lemon Extract.  Pour cooled Jello mixture and Lemon mixture into mixing bowl and whip til smoothly blended and slightly frothy.  Remove crust from freezer and pour filling into crust, set in fridge to chill for 2 hours or more.  Once set, frost with Cool Whip and garnish with Lemon Curls.  Serve with Raspberries, if desired.  Enjoy  :)




Pineapple Upside Down Cupcakes







     Who doesn't love Pineapple Upside Down Cake!?  It's hard not to resist!  So, being the solution minded girl that I am, I took portion control into my own hands and made over sized cupcakes!  (#yourewelcome)  And, we need to take a moment of silence to praise the Cupcake Gods for making the JUMBO cupcake tins. There are 6 slots to a tin, this recipe will fill 3 of those.  Each Cupcake is only 155 calories, 13.7g net carbs and 8.3g protein.  Have some today  :)

Ingredients for 3 jumbo Cupcakes~
1 Tablespoon Coconut Oil
1 Extra Large Egg
1/3 cup 35 cal/cup Cashew Milk
1/2 scoop Quest Salted Caramel or Vanilla Protein Powder
3 Tablespoons Lakanto Monk Fruit~use code Paige20 at checkout for discount
2 Tablespoons Coconut Flour
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla
8oz Pineapple Chunks, drained
3 Cherries
Whipped Topping, for garnish if desired

     Mix all ingredients except pineapple and cherries, set aside.  Spray 3 jumbo tins with Coconut Oil spray or Pam, place Pineapple Chunks around bottom perimeter of tin, add a cherry in the middle of each and fill the tins equally with the batter.  Bake at 350 for 22 minutes.  Remove, cool and flip, then garnish with Whipped Topping if desired.  Enjoy  :)

Double Layer Coconut Cake








     Holidays are a special time, so why not celebrate with a healthy Double Layer Coconut Cake!?  What could make the day's more festive!?  This delicious treat is only 143 calories, 8.3g net carbs and 5.7g protein per slice. Whatever the occasion, I know what I will be having for dessert!  :)

Ingredients for 8 servings~
1/4 cup Coconut Oil, melted
1 Extra Large Egg
1 cup 30 cal/cup Almond Milk
1 scoop Quest Vanilla Milkshake Protein Powder
1/4 cup Coconut Flour
1/4 cup Lakanto Monk Fruit~use code Paige20 at checkout for discount
1/4 cup + 2 Tablespoons reduced fat Shredded Coconut ( I use Let's Do Organic brand)
1 Tablespoon Coconut Extract
1 teaspoon Baking Powder
1/2 tub Lite Cool Whip
Cherries, for garnish if desired (not included in macros)

     Mix together all ingredients except 2 Tablespoons Coconut Shreds and Cool Whip.  Grease a 7 or 8 inch cake pan and line the bottom with parchment paper, and pour batter into pan.  Bake at 350 for 32 minutes, remove and cool to wire rack.  Use 8 toothpicks to insert half way up side of cake around diameter, use those guides to slice cake in half thru the center, forming a top and bottom.  Use Cool Whip to frost bottom half, set top half into place and finish frosting, then sprinkle with the last 2 Tablespoons Coconut Shreds.  Garnish with Cherries if desired.  Store in fridge.  Enjoy  :)

Chocolate Granola Breakfast Bars








     Oh goodness!  I can't use enough adjectives to tell you how scrumptious these turned out!  Chocolate Granola Breakfast Bars may be my new morning go to!  Each of these four HUGE bars are only 209 calories, 23g net carbs and 11.5g protein.  I died a little with each bite!  Once life returned, I started to think about how long before I could eat my next piece...  :)

Ingredients for 4 large servings~
2 ripe medium peeled Bananas, mashed
1 cup Uncle Sam Toasted Whole Wheat Berry Flakes & Raisins (do not grind, keep in cereal form~ http://www.unclesamcereal.com for more information and where to buy)
1 scoop Quest Chocolate Milkshake Protein Powder
1 jumbo Egg
1/4 cup reduced fat shredded Coconut (I use Let's Do Organic brand)
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla
2 Tablespoons Walnut pieces
1 Tablespoon Lily's Stevia Sweetened Dark Chocolate Chips


     Mix everything together but Walnuts and Chocolate Chips and pour into 8X4 parchment lined loaf pan.  Top with Walnuts and Chocolate Chips, bake at 350 for 20 minutes.  Voila!  Enjoy  :)

Chocolate Cookie Dough Ice Cream Sandwich







     When it's ok to say yes...!!!  You will be agreeing to loads of flavor, fun and fearlessness!  Why you ask, ...whelp when you can have rich chocolate ice cream smashed between two chocolate chunk cookies all for 205 calories 5g net carbs and 22g protein then what other answer is there...!?  Not only yes, but where can I get mine the fastest!  ;)

Ingredients for a Chocolate Cookie Dough Ice Cream Sandwich~
1 Quest Cookie Dough Protein Bar, cut in half
1/4 cup Chocolate Halo Top Creamery Ice Cream

     Microwave Quest Bar halves for 10 seconds, pat into two equal circles and lay on silpat lined cookie sheet.  Bake at 350 for 5 minutes, remove and cool.  Meanwhile soften Ice Cream enough to scoop out a 1/4 cup with a measuring cup and place between the two cooled halves.  Eat as fast as you can, licking all drips with abandon!  Enjoy  :)

Blueberry Banana Parfait






     The world literally melted away with each and every bite of this Blueberry Banana Parfait.  What a gift!  This could become habit forming, especially since it was only 222 calories, 32.6g net carbs and 14.2g protien.  Although, I usually don't have this many carbs in one meal, I used this as a pre work out snack and so it "fed" my purpose!  This was literally heaven and I hope you will join me in the clouds and float into a bliss filled wonder with each passing mouth full!  :)

Ingredients for one Blueberry Banana Parfait~
1~ small peeled Banana, sliced
1~80 calories container of Banana Cream Dannon Light&Fit Non Fat Greek Yogurt
1~rounded Tablespoon Blueberries

Guacamole Grilled Habanero Chicken







     If there was any way I could have invited everyone I love over to my house to share a bite of my dinner I would have.  This was seriously one of the best things I have ever eaten.  Guacamole Grilled Habanero Chicken must go to the top of your to-do list.  I have a secret ingredient for making the best Guac known to man.  Try it for yourself and see if you agree!  Health and flavor all in one plate makes Paige a happy girl <3

Ingredients for Guacamole Grilled Habanero Chicken~
2 Roma Tomatoes, diced and drained on a paper towel for several hours
4 Avocados, peeled and seeded
1/4 inch slice white Onion, diced finely
2 teaspoons chopped jarred Garlic, diced finely
2 Tablespoons Key Lime Juice
Dash Pink Himalayan Salt or regular Salt, to taste
Dash Pepper, to taste
Grilled boneless skinless Chicken Breast
Biena Habanero Chickpea Snacks (www.bienafoods.com)

     After diced Tomatoes have drained several hours on paper towel, put the skinned Avocado in bowl and mash.  Stir in Tomatoes, Onions, Garlic, Key Lime Juice, Salt and Pepper.  Note:  I have a Pampered Chef Chopper that I used to really chop the heck out of my Onion and Garlic all together, til it was almost a crushed texture and made for easy blending.  This makes a large batch, and will lend itself to enjoy leftovers.  Meanwhile, grill your boneless skinless Chicken Breast, and when ready to serve slather with Guacamole and top with Biena Habanero Chickpea Snacks.  Enjoy  :)

Ingredients for 10 Stuffed Cupcakes~

3/4 cup 35 cal/cup So Delicious Cashew Milk

1/4 cup Cocoa Powder or Black Cocoa Powder
1/4 cup Nutiva Coconut Flour
1/4 cup Swerve Confectioners Erythritol
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla

     Mix all ingredients til smooth, except for TruWhip.  Fill 10 Silpat lined cupcake tins with batter, bake at 375 for 15 minutes.  Remove and cool.  Add TruWhip to frosting bag with tip inserted in bottom, press cake tip into Cupcake and fill cavity, then finish with a swirl of TruWhip on top, allot 2 Tablespoons per Cupcake.  Refrigerate any left overs.  Enjoy  :)
