Austrian-Inspired High-Protein Carrot Ginger Soup


One of my favorite memories from hiking through Austria wasn't just the breathtaking mountain scenery, it was a simple bowl of carrot ginger soup waiting at the end of the trail. Warm, creamy, and filled with fresh flavors, it was exactly what I needed after a day of hiking. When I returned home, I couldn't stop thinking about it, so I recreated it with a Real Food Recovery twist by adding protein-rich Greek yogurt and colorful vegetables. The result is a nourishing, velvety soup that's as satisfying as the one I enjoyed in Austria and perfect for any season.


 Austrian-Inspired High-Protein Carrot Ginger Soup

Yield: 4 servings (about 2 cups each)


Ingredients~

1 tablespoon extra-virgin olive oil

1 medium onion, diced

16 ounces baby carrots, diced

1 tablespoon garlic, minced

Dash of cayenne pepper

Dash of ground cumin, or to taste

1 red bell pepper, diced

2–3 tablespoons fresh ginger, finely chopped or grated

3 cups low-sodium chicken broth

3 (5.3-ounce) containers FAGE Total 0% Plain Greek Yogurt

Salt and freshly ground black pepper, to taste


Directions~

1. Heat the olive oil in a large Dutch oven or soup pot over medium heat.

2. Add the onion, carrots, garlic, cayenne pepper, and cumin. Sauté for 12–15 minutes, stirring occasionally, until the vegetables begin to soften.

3. Stir in the diced red bell pepper and fresh ginger. Continue cooking for another 5 minutes, until the pepper softens and the ginger becomes fragrant.

4. Transfer the cooked vegetables to a high-powered blender. Add the chicken broth and all three containers of Greek yogurt.

5. Blend until completely smooth and creamy. If you prefer a thinner consistency, add a little additional broth until it reaches your desired texture.

6. Taste and season with salt and freshly ground black pepper.

7. Divide into four generous 2-cup servings and enjoy.
