Apple Protein Oat Bites | High-Protein Recovery Snack, A Simple Real Food Recovery Snack

Apple Protein Oat Bites
Ingredients~
1 cup Oats~(¾ cup ground oat flour)
1 scoop plain protein powder (only one ingredient of Whey Protein)
1 Teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla
3 large eggs
5 ounce finely chopped Cosmic Crisp Apple (sub with favorite Apple, …but Cosmic Crisps are the Apple of my eye #seewhatIdidthere)
Instructions~
Preheat oven to 350°F.
In a bowl, combine the ground oats, protein powder, baking powder, vanilla and eggs. Stir until well combined. Allow the batter to rest for 10–15 minutes, or longer if wish. This gives the oats and protein powder time to absorb the moisture and helps create a better texture. Divide the batter (about an 1/4c each) evenly into 6 muffin cups or silicone muffin liners. Sprinkle the chopped apple pieces over the top of each portion, gently pressing them slightly into the batter. Garnish with extra Cinnamon if desired. Bake for 25-27 minutes (protein powder baking will continue to firm up after baking), or until the centers are set and a toothpick inserted comes out mostly clean.
Allow to cool before storing. These can be enjoyed immediately or stored for an easy grab-and-go snack.
