Mocha Peanut Butter Pudding with Chocolate Sauce







     How can anything that tastes this good be sooo good for you!?  IDK, but it is!  The entire melt in you mouth serving is only 296 calories, 9.7g net carbs and 34.2g protein (macros don't include whipped topping garnish).  So if you have the choice between a hearty serving of health vs an empty calorie pudding cup, what will you choose!?  Simple and satisfying is the name of my game!  :)

Ingredients for one generous bowl of Chocolate Pudding~
2/3 cup 30 cal/cup Almond Milk
1 scoop Quest Chocolate Milkshake Protein Powder
2 Tablespoons Betterbody Foods Chocolate Peanut Butter Powder PB Fit
2 Tablespoons Swerve Confectioners Erythritol
1 Tablespoon Cocoa
1 teaspoon dried Instant De Caf Coffee Crystals
Dash Cinnamon
Dash Betterbody Foods Vanilla
1 teaspoon Xanthan Gum, (optional, but otherwise not a thick pudding consistency)

2 Tablespoons Betterbody Foods Chocolate Peanut Butter Powder PB Fit
2 Tablespoons Water
1/2 Tablespoon (30) Lily's Stevia Sweetened Dark Chocolate Chips
1 Tablespoon sliced Almonds
Whipped Topping, as garnish if desired (not included in macros)

     Mix first set of ingredients in Magic Bullet or Blender til well incorporated and chill in bowl (an hour or overnight).  Meanwhile, when pudding has thickened to desired consistency, stir together from second set of ingredients the Chocolate Peanut Butter Powder and Water til smooth, pour over Pudding.  Top with Chocolate Chips and Almonds, garnish with Whipped Topping if desired.  Enjoy  :)
