Pumpkin Protein Bars

     I almost hate to use the title Pumpkin Protein Bars, these are so darn good no one will believe they are truly protein bars.  But I am certainly willing to give it a try!  Each of these delicious hearty treats are only 175 calories, 5g net carbs and 12g protein.  Why buy a protein bar when you can make your own on occasion!?  #proteinpower

Ingredients for 3 Bars~
1 Tablespoon Coconut Oil, melted
1/4 cup Pumpkin
1/4 cup reduced fat Coconut Shreds ( I use Let's Do Organic)
1 scoop Quest Salted Caramel Protein Powder
1/3 cup Chocolate Peanut Butter Powder

1 Tablespoon slivered Almonds
30 Lily's Stevia Sweetened Dark Chocolate Chips

     Mix first set of ingredients and pat into 3 bars, top with Almonds and Chocolate Chips and slightly press down into dough.  Chill over night.  Enjoy  :)
