Almond Joy Hay Stacks
Here's what I love about my Almond Joy Hay Stacks, first of all they are darn good, secondly they are made with good clean ingredients, thirdly they are perfectly Keto, and lastly you can make this entire recipe in about 15 minutes. Need I say more!? Each of these 16 pieces are only 83 calories, 7.7g carbs, 3.1g fiber, 3g sugar alcohol, 1.6g net carbs, 1g protein and 7.6g fat. This is an excellent Valentines, Christmas, or Easter treat...OR, simply an everyday "you're doing a good job at life" celebration. :)
Ingredients for 16 Haystacks~
1/2 cup Lily's Stevia Sweetened Dark Chocolate Chips
2 Tablespoons Coconut Oil
2 Tablespoon Lakanto Monk Fruit~use code Paige20 at checkout for discount
1 cup unsweetened shredded Coconut Flakes
16 Almonds (I prefer the roasted salted, but raw is fine as well)
Add Chips and Oil to bowl, microwave 15 seconds and stir til smooth, repeat if necessary but only do 10 second increments. Stir in Monk Fruit and Coconut til fully incorporated, drop by Tablespoons on parchment or wax paper lined cookie sheet, top each with an Almond and press gently into Hay Stack. Chill til set. Enjoy :)
