Lucky Brownies






     Luck is something you have based on how you look at things...except for during St Patrick's Day, then everything green is considered good fortune.  Luckily, these Lucky Brownies have plenty of representation in this area.  Read on for a couple of fun ingredients that are the color you get when you mix yellow and blue!  Each of these nine Brownies are only 202 calories, 21g carbs, 4g fiber, 14.2g sugar alcohol, 2.8g net carbs, 6.1g protein and 17.6g fat.  Bite into these, and I dare you to not start visualizing the pot at the end of the rainbow...once again, it's all about perspective! ;)

Ingredients for 9 servings~

4oz Zucchini

2 Tablespoons Butter, room temperature

1/3 cup Lakanto Golden Monk Fruit~use code Paige20 at checkout for discount (sub with Classic Monk Fruit) 

1 small ripe Avocado, approximately 3.5oz of fruit

2 Extra Large Eggs, room temperature

1 cup Almond Flour

1/2 cup Cocoa

1 teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

2 Tablespoons Butter, room temperature

1/4 cup/2oz Cream Cheese, room temperature

1/4 cup Sour Cream

1/3 cup Lakanto Powdered Monk Fruit~use code Paige20 at checkout for discount

Sprinkles, for garnish as desired, not included in macros

     Grate Zucchini into dish towel, squeeze out any excess liquid, let drain in towel for a couple hours, set aside.  Meanwhile, when ready, cream Butter and Golden Monk Fruit til whipped, then beat in Avocado til thoroughly blended, repeat with shredded Zucchini, then Eggs.  Continue to mix in remaining first set of ingredients, add to parchment lined 8X8 pan and bake at 350 for 25-28 minutes, remove and cool to room temperature.  Lastly, using second set of ingredients, cream together Butter and Cream Cheese til smooth, then blend in Sour Cream, and lastly beat in Confectioners Monk Fruit, spread on Brownies, garnish with Sprinkles if desired, not included in macros.  Enjoy  :)
