Chocolate Covered Chickpeas






     If you are a lover of Chickpeas, then this one is for you!  This is a fun project in the kitchen, and whips together super quick.  These 8 clusters are only 100 calories, 15.8g carbs, 6.5g fiber, 2g sugar alcohol, 7g net carbs, 3.3g protein and 3.5g fat.  If you want a nice serving of fiber disguised as dessert, then start heading to the kitchen right now!

Ingredients for 8 Clusters~

1 can drained Chickpeas, patted dry

1/2 cup Lily's Stevia Sweetened Dark Chocolate Chips

Sprinkles, if desired for garnish (not included in macros)

     Drain and pat dry Chickpeas, add to parchment lined baking dish, bake at 350 for 35-40 minutes or til crunchy and lightly browed, stir half way thru.  Pour 1/4 cup Chips in bowl, and pour hot Chickpeas straight from the oven in bowl, stir til well coated and drop by 2 Tablespoons on wax paper.  Add remaining Chips to microwave safe bowl and microwave by 15 second increments, stirring after each til melted, add to ziplock baggie, snip corner and drizzle over top of each, garnish with sprinkles if desired.  Note:  even though Chickpeas are firm after roasting, they tend to soften a little when cooled.  So in full disclosure, these will not stay quite as crunchy, but flavor is still unique.  Enjoy  :)
