Keto Stir Fry
If there were a side dish contest this would win first prize. Keto Stir Fry fires on all cylinders. Each of the four large servings are 118 calories, 9g carbs, 2.5g fiber, 6.5g net carbs, 10g protein, and 6g fat. What ever you are having for dinner, make sure to save a seat at the table for my Keto Stir Fry. :)
Ingredients for four equal servings~
4 slices Thick Bacon, diced
1 Tablespoon chopped Garlic
Dash Cayenne Pepper
8oz sliced fresh Mushrooms
12oz (2 1/2 cups) diced Yellow Squash
12oz (2 1/2 cups) diced Zucchini
1/4 cup diced Onion
1/4 cup shredded Parmesan
1/4 cup diced Cherry Tomato
Dash Salt
Dash Pepper
Add diced Bacon to skillet, along with Garlic and Cayenne. When half cooked, add Mushrooms til cooked thru. Add Squash, Zucchini and Onion til crisp tender. Sprinkle with Parmesan, Tomato, Salt and Pepper. Divide into four equal servings. Enjoy :)
