Peanut Butter Mousse Pie







     I figured out the perfect pie crust that glorifies the Keto lifestyle. ...But then I had to come up with an amazing topper just to show off.  #missionaccomplished  This is my classy take on a "fat bomb".  Each of these four freakishly delicious mini pies are only 278 calories, 13.5g carbs, 6.3g fiber, 3g sugar alcohol, 4.2g net carbs, 9.5g protein, and 25g fat.  Be prepared to practice self control, I guarantee after the first, you will want a second...but don't do it, save it til tomorrow and experience the joy all over again, ...and again, ...and again!  This is simply divine, a little salt and a lotta sweet!  :)

Ingredients for four Peanut Butter Mousse Pie's~
1oz/2 Tablespoons Cream Cheese, room temperature
1 Tablespoon Butter, room temperature
1 scoop unflavored Vital Proteins Collagen Peptides
1 Tablespoon Heavy Whipping Cream
1 Tablespoon Peanut Butter Powder
1 Tablespoon Lakanto Confectioners Monk Fruit~use code Paige20 for discount
Dash Cinnamon
Dash Vanilla

1/4 cup Almond Flour
1 Tablespoon Butter, softened to room temperature
Dash Salt

4 10g squares ChocZero 70% Dark Chocolate (sub with similar sugar free chocolate)
4 Tablespoons no sugar added Chunky Peanut Butter

     Mix first set of ingredients til well blended, chill to set.  Stir together second set of ingredients till soft ball forms, divide into four equal portions, each should be a scant Tablespoon.  I used my food scale for precision, each dough was 3/8oz.  Press into bottom of silpat cupcake liner and bake at 350 for 10 minutes.  Meanwhile, unwrap each of the four chocolate squares, slicing off a thin edge on each one, chop each of the slices into small bits and set aside.  When crusts have finished cooking, add one Chocolate square to each pie crust and put back in oven for one minute to melt.  Remove and agitate cupcake tin til Chocolate is evenly spread in each container.  Set in fridge or freezer to harden, then remove when set, spread each with a Tablespoon Peanut Butter, then add a 1/4 of the Mousse topping to each and garnish with Chocolate crumbles.  Enjoy  :)

    3. I am not sure if there would be enough crust for a 9" pie, you would have to use a small tart pan, that might work. :)

  2. The collagen just adds protein right? Will it change the texture/consistency if it’s left out?

    1. Collagen adds protein, and it's a special protein that is good for your hair, skin, nails and joints. Since this is a non baked item, it should not change much, if it were being baked then it might change things a bit. My philosophy is to give it a try and see how it turns out, if it turns out differently that's okay, you have just made a new creation! Let me know the end results! Thanks for the question! :)
