Sour Cream Sugar Cookies
We need to be involving our children in the kitchen as much as we can. My Sour Cream Sugar Cookies are a great place to start. This Easter, have the kiddos sit down with colored Frosting and give it a go. Perhaps they will even learn to love sugar free if they are part of the process. Each of these Eggs are only 97 calories, 5.9g carbs, .6g fiber, 4.9g sugar alcohol, .4g net carbs, 2g protein and 9g fat. These are even Easter Bunny approved! ;)
Ingredients for 23 frosted Cookies~
1/4 cup/4 Tablespoons Butter, room temperature
1/3 cup Lakanto Confectioners Monk Fruit (sub with regular)~use code Paige20 at checkout for discount
1 Extra Large Egg
1/4 cup Sour Cream
1 cup + 2 Tablespoons Almond Flour
1 teaspoon Baking Powder
Dash Almond Extract

1/4 cup/4 Tablespoons Butter, room temperature
4oz Cream Cheese, room temperature
1/4 cup Lakanto Confectioners Monk Fruit (more to taste)~use code Paige20 at checkout for discount

Food Coloring as desired
Beat Butter with mixer, add in Confectioners Monk Fruit til well incorporated, then blend in Eggs and Sour Cream. Finish by adding Flour, Powder and Extract. Chill in fridge for one hour. Meanwhile, blend together second set of ingredients til fully combined. Drop dough by level Tablespoon in the middle of an Egg shaped cookie cutter on top of a silpat lined cookie sheet, press to fill cutter then gently lift cutter, repeat with remaining dough. Bake at 350 for 10-12 minutes, cool. Add Food Coloring to Frosting and decorate as desired. Enjoy :)
